One of the Dan! doctors we've seen recommends coconut kefir instead of probiotics for some of his patients who don't require or can't tolerate stronger probiotics.
Trouble is... I want to be able to BUY coconut kefir. I don't want to have to make it. You can buy cow's milk kefir in many grocery stores. http://www.bodyecologydiet.com/coconutkefir.php

Found a good resource for making kefir. Now... I just need to find the grains.

When I was doing SCD this summer, I traded some e-mails with someone who made her own coconut milk yogurt. Now that I can eat canned coconut milk again, I may try it. Making your own SCD coconut milk is tasty, but time consuming. I think it only takes 8 hours to make your own coconut milk yogurt. The trick is to separate the water out ahead of time or the yogurt ends up separating itself. This might motivate me to try it!

I used to make coconut milk yogurt. Did your pen-pal do anything to get it to solidfy? I used to add gelatin, but it was never a great solution. Probably pectin would work better.
I think you have to be careful with canned coconut milk, I know lots of it has preservatives which, I'm thinking, might kill the good bacteria off. The "light" coconut milk I get at Trader Joe's doesn't have the preservative. |

I saw some Kefir starter at the store today so I am going to try making rice milk kefir (I make homemade rice milk).
I'll let you know how it goes. (FWIW, the starter is Yogourmet and is not dairy-free. It has non-fat dried milk added to it.) Rachel |
