Are the 2 always interchangeable? I see a lot of recipes call for xanthan gum and than see a few say xanthan gum or guar gum. Well I can get guar gum easier than xanthan gum.
Is one better than the other, or is there something else that's better? I have made bread before but doing wheat free is new to me.

No one knows?
Are there sites that have good wheat free/gluten free baking info? I can't seam to find any.

Gee, I'm surprised no one jumped in here with an answer. Let me pull out all my GF books and magazines and see what I can find for you. Seems like I read something about it recently. I do know I just about fainted when I saw the price of xanthan gum. I want to know which will be cheaper for me to use.

Okay here is what I learned. In short they are interchangeable.
One book I have says guar gum is usually cheaper but can also have more of a laxative effect than xanthan gum. That said I think I'll just stick with xanthan gum. Another book I have states that she uses xanthan gum in virtually all baked goods except cakes that don't use much fat. For those recipes she uses guar gum.

Thanks WeaveHerr, that helped a lot. My bread machine will be here today and the flours and mixes Thursday but I'm going to the health store tonight to pick up the xanthan gum and maybe a wheat free bread mix so I can go ahead and test the bread machine in the morning.
I miss real bread SO much
