Bowl Muffin (Mix and microwave in the same bowl)

I use about 2 Tbl of a flour mix like coconut flour and rice bran, sometimes all of one or the other. I put in about 1/2 tsp baking powder. Mix the dry ingredients well (add your sweetener here if you use sugar (1-2 Tbl). Then crack an egg in the bowl, add in any liquid sweetener, add in a few drops of lemon or banana extract. Beat the wet ingredients with a fork and start to incorporate the dry. Add more liquid (water, kefir, oil, whatever) until it is about pancake batter texture. Then I often add frozen raspberries (drop in a few) and nuts (pecans or walnuts). Microwave for usually about 1.5 minutes until it stops bubbling and looks a little dry. Don't over cook as it will get too dry.

You can top with butter or ghee.

Personally... I find this is delicious. Sometimes I have it for dessert.
