Roasted Veggies are a favourite of mine. They're extremely easy and SO delicious!!
I must admit that Karina, over at OBT really got me going on these. She has wonderful recipes for roast veggies. My recipes are no where near as creative as hers but I find these dishes to, still, be quite delicious! For a wonderful vegetarian meal, they are nice over rice for dinner... and for breakfast, I top the leftovers from the night before, with a couple of poached eggs. For meat eaters, it's a great side dish! Choose 3... any 3... : (This is enough to keep a rotation diet started and going until you know what you're reacting to.) 1) zuchinni, beet, red pepper 2) potato, onion, mushrooms 3) green beans, garlic, tomato 4) cauliflower, broccoli, carrots Place in baking dish with fairly high sides so that your veggies don't fall out when you give them a stir: Drizzle with oil. Toss with fingers to spread the oil. Sprinkle with sea salt. Toss with fingers. Sprinkle with sea salt. Toss with fingers. Place in 350F oven for 20 minutes. Stir. Roast for another 20 minutes. Check to make sure they're fine. Determine if they need another 10 minutes. Serve with rice and enjoy!
