Default Easter baking tips for myasthenics

If you're working with egg whites (like lemon meringue pie) and the recipe says "beat until stiff," it's talking about the egg whites, not you. If you only beat them until you're stiff, you'll have runny meringue. Just saying.

I made a hollandaise sauce Easter morning - beating the yolks took about 20 minutes. The whole time I could see my family checking on me and thinking that I was going to ruin the sauce. But if I've learned anything from MG - it is patience and doing things one step at a time. Thankfully egg yokes are very forgiving. Sauce was awesome.
