Aunt Bean, thanks for that recipe for fermented papaya. I simplified your recipe even further. I just peeled and removed the seeds and the white stuff in the middle of the papaya, mashed it up, put it in a jar with 1 tspn of cinnamon and 1 tspn tumeric and 1/2 tspn salt, stirred it up, put a lid on the jar, and let it sit at room temp for about 5 - 6 days before refrigerating it. I skipped the dehydrator.
You can tell by tasting it when it is ready. On day 1 of fermentation it tastes flat and uninteresting. By the fifth or sixth day, it has a wonderful tangy sweet taste. It violates the fundamental rule of childhood: nothing which tastes so good can be good for you. I have no idea how much to eat so I just arbitrarily decided on 3 or 4 heaping tablespoons per day. How much do other people eat? |

The way the man on U Tube made it and mixed with Aloe Vera juice, I couldn't tolerate...can't swallow the stuff...don't know if I am alergic to it or what, but my body says no to it. Dehydration was the firtst thing that popped into my head as a way to preserve it and make a quantity at one time.. I can get three papayas into my dehydrator which becomes oone large gallon ziploc of dryed fermented papaya chips.
I eat 2 every morning with my breakfast, as does my dad (86 yr old) and it helps his balance too. I want to keep him around and he will eat just about anything for me that is healthy....even raw garlic on buttered bread when he gets a cold. (Puts hair on your chest!!!!) GiGGLE......God Bless |
My "chips" are about one Tbs of fermented papaya mixed with ground flax seed meal
(which gives it body when dehydrating) Just eating the mash would work too.... I'd say eat as much as helps your symptoms without giving you diarhea or other bad effects. I think you will know when you are taking too much. I will try doing that with the one papaya that I am fermenting now.....it would save on electricity to run the dehydrator........Thanks for sharing this!!! Will let you all know what I think of it. |
There is a fermented papaya sold on line, very expensive little packets of white powder. Just googele fermented papaya (think it was called FFP) or something like that.

I am diabetic, but the fermented papaya doesn't seem to effect my sugar. By the way , I finnished my last batch of papaya and did not add ground flax seed or dry it ...just put it in a jar in the refrigerator. Dad And I are taking 2 Tbs in our cereal every morning instead of eating 2 fermented dried chips...I like it real well this way. I am wondering how long it is good for in the refrigerator though, but we are going thru it fast.
