Thanks for sending this link but......
Ive never heard of these medical researchers and wasn't aware UTS had a medical research faculty (two of my children are UTS graduates.)
My son is a medical research fellow at a nearby uni and used the old "take it with a grain of salt" line.
Will look into it further.

A natural iron chelator is phytic acid or inositol hexaphosphate or IP6.

It apparently passes the blood brain barrier, at least in rats. http://journals.cambridge.org/action...ine&aid=892364

phytic acid is the storage form of phosphorus in seeds and is found in the seed coat, it is broken down by the enzyme phytase during germination.
It is also broken down somewhat when phytase is activated during the leavening of bread.

it also chelates zinc, calcium and other positively charged minerals.
