Just north of the border. NSW/QLD. I know you said you make a great chili, well yesterday I'd made some chili con carne. Didn't want to use it all in the one meal / dish, so I saved half for the freezer and used the rest to make pretend enchiladas. Just used really thin 'wraps'. Rectangular ones. These ones are called Mountain Bread and I like them a lot. So I wrapped the chili in them, rolled them up and just topped with some cheese and baked in the oven for a short time. Served it with a very basic and small amount of salad and I used the avocados to make some guacomole and a dollop of sour cream. It was really good and even though it wasn't the same as regular enchiladas, it still had that same feel to it.
We eat a lot of rice here. I know some people don't like rice, but I cook so much rice I eventually gave in and bought a rice cooker. If you're busy it's a really great appliance to have.

anyway, have a good day there. I'm up way too early this morning. The moon is so bright it's like daylight.

Yeah, Rice, that's a really good meal stretcher. (That is if you're not a diabetic, then... you can do it with Brown Rice).

Do some chicken stir fry- add some snow peas, some fresh garlic, some diced carrots, some diced celery, some sliced mushrooms, add a little reduced sodium teriyaki sauce. Service this over a plate of rice.

They'll be kissing you all night!!!

What about those "slow cookers"?

I've never used one myself but they're everywhere in the stores now and quite inexpensive. I would imagine they would be handy for someone who is working all day and tired when they get home from work.

The only thing that put me off ever buying one is that our climate is pretty hot and I would worry about the food spoiling if it was cooking at a low heat for a long time, but I'm not sure if that's how they work or not.

I have one, and it's great for veggies. When I put beef into it though, the beef tastes boiled. If I reduce the water it comes out really dry. My friend uses one,and she puts lamb in hers. When I ate her food, it was the best food I ever tasted from a crock pot. The lamb melted in your mouth and it was so juicy. My lamb would shred into a million pieces (disintegrate).
I have to be doing something wrong, (all the time), it's no wonder I am "off " this whole cooking thing, if every dish I try to make I muck up somehow!!:D

Is a crock pot the same thing as a slow-cooker????

When I worked, I was always afraid to buy one of the slow-cookers.

My mind could not get wrapped around the idea of something plugged in ALL DAY AND COOKING, and I'm not home??? I just couldn't do it!!!!

I use it when I am home. I don't like leaving electricity on when I am away as well. I always worry about the house, when I am at work anyways. If you add a plugged in appliance that's cooking... I'd be a disaster!

So exactly how does a slow-cooker, crockpot thing work?? Is it like a pressure cooker??? I've never used one of those either.

Over 50 years ago, my mother had one in her kitchen. I have no idea what she was cooking but it blew the lid off and ended up all over the kitchen ceiling. I never saw my father go crazy like he did. I was so amazed, I had never seen food on the ceiling before.

And I never bought a pressure cooker!!!

I believe pressure uses steam. This is more like a thick ceramic pot, that heats and cooks slowly. It's actaully ceramic, and you put the food in the ceramic,and then you place it into the aluminum/metal electrical thingy and that is the part that plugs into the electricity, and heats the ceramic dish.

No pressure used. I bought it for $50 5 years ago. It came with a cookbook, I ofcoarse threw it out without looking at it:rolleyes: ...and I am paying the price for that mistake with BAD COOKING!!!!:eek:

You can find anything you wish to prepare.

See, there you go, Don't need a cookbook. Just go online and Let's say you want to make a lovely lamb stew in a crockpot.

Just go to google, and type in Crockpot recipt for Lamb Stew.

Not only will you get the recipe, you'll probably get a crockpot website and will show you how to prepare anything you wish.

Crockpot = modern invention to replace ole-fashioned cast iron dutch oven in the oven or fireplace. Low heat simmers (kinda) all day. Good for roast beef or chicken without much-liquid to stews and chili. Wonderful invention. We have 'em in 3 sizes. Some aren't immersible (the smaller & cheaper ones). Some have a separate ceramic 'pot' that separates from the housing unit. Wouldn't be without one. first gift to college kids when moving away to school. Teach 'em how to buy cheaper cuts and CROCK POT 'EM.!

Can you roast a whole chicken in a crock pot???

I usually roast a big oven stuffer roaster and it cooks for two hours at 350 degrees.

so how long to cook a whole chicken in the crock pot. Does it get nice and browned??

Hi Melody:

You betcha you can cook a whole chicken in a crockpot or slow cooker. I don't remember how brown it got, but I have done that several years ago. Mostly, cooking in these handy gadgets is done with steam so to speak. You can put in vegetables too if you wish - depends on the size of the cooker or crockpot. I think those names are interchangeable. They started out being called crockpots but now I think they are also called slow cookers - at least my latest one is. It is a small sized one good for one person. I do need to get another and larger one, though, so I can have more leftovers.

The chicken made in the crockpot or slow cooker just falls apart, it is so tender. I don't like leaving it alone all day when I am out, although I used to do this years ago. I now have it on during the night and by morning things are done nicely. I add just a little water in the bottom to make steam. I also make sauerkraut and spareribs this way and the meat gets so tender. I used to make beef roast and now I make corned beef briskets. Beef roasts these days, however, come more lean and are not so tender anymore. I also make bits of sliced chuck steak in canned tomato with flour added to make a sort of gravy. This is yummy and the small pieces of beef are so tender. I add the beef raw, by the way. When done, this is very good over potatoes or brown rice.

I love my slow cooker! By the way, best to not keep taking off the lid to check - this removes too much steam!

A dish I make frequently is chicken thighs - sprinkle some garlic powder over the top and some orange juice on the bottom of the ceramic dish for liquid. Salt too if you use it. I use thighs with skin on and bones in. We all need a little fat in our diets! The skin does make the meat more tender I believe. A package of chicken thighs gives me meat for several meals. I am alone now, and this meat warms up so well in the microwave. Then I just add vegetables, fruit, a beverage and there is my meal.

Let me tell you about my experience the first time I tried to roast a chicken.

I was 28 years old . I bought the chicken, I cleaned the chicken (just like I saw my mom do....you pour salt over the chicken, you run it under the cold water, you scrub it clean, and you rinse it off. You take the chicken, holding it open and you let the water run inside and you turn it upside down and the water runs clean. (That's how my mother did it).

Okay, I do all that. I put chicken in the pan, I put garlic powder, I take a little extra virgin olive oil and put some in my hands and rub it all over the chicken. Then I sprinkled on whatever seasonings people put on chicken.

Then I cut up fresh parsley, sprinkle that on. (my oven was preheated to 400 degrees at the time). So the oven gets hot, I put in the chicken and twenty minutes later, my boyfriend at the time, comes running into the living room yelling "the chicken is on fire". I said "what on earth are you talking about, how can a chicken be on fire???"......so I look inside the oven and sure enough the thing is in flames. Because I had no idea what to do, I shut off the oven, waited an hour and then opened the oven door and what do I see.... a bag of things are stuffed inside the chicken....

My boyfriend says to me "what is that thing that caught on fire??" I said 'I have no idea, I'm calling up my mother". After laughing her head off she said "you have to pull the bag out of the chicken, every chicken comes with a little bag stuffed inside" I said "stuffed inside?,they stuff things inside of a chicken?? what is inside the bag?" Then she told me "gizzards and the neck".


Let me tell you. It was years before I ever roasted another chicken.

Now let me ask you this. Where does it say on a chicken "Look inside and you'll find a little bag with gizzards and the neck"??. I was telling this story to a friend on the bus and in five minutes, the whole bus was laughing so hard some people forgot to get off at their bus stop.

And don't get me started telling what happened the first time (the very first time) I tried to make spaghetti. What does it say on the box??? Drop into boiling water. Yep, I put the whole box in. I must have been 19 years old.

And then there was the time I took the turkey out of the pan to put it on the big platter, and the bird fell on the kitchen floor. Figuring, how much dirt could the thing collect in that short a time, I put the darn thing on the platter and served it. No one caught on and no one got sick or died. ARRGH. I usually kept my kitchen floor pretty clean.

Oh, one day, long long ago, I had my friends over for Roasted Lamb. Came out pretty good. They had a 2 year old. My godson, Sean.

Now I had goldfish in a 10 gallon tank, in my living room. So we are all in the kitchen enjoying dinner, when little 2 year old Sean, comes in and babbles "Auntie Mel, I fed the fish". And we laughed and we didn't get it!!!! He says again. "Auntie Mel, I fed the fish" and I looked at him and said "That's nice honey, you fed the fish" and he beams and says "Yeah, I fed ALL the fish". You ever see 3 people jump out of their chair and run into the living room and see a whole box of gold fish flakes completely enveloping all the fish????? The father took the net and scooped out as much as he could. But later there was 10 dead fish in my fish tank.

The look on their faces was priceless!!!!

Easy roast chicken...
 
Yes clean it, yes pat it dry. Sift some flour very lightly on the 'top side of the chicken [makes the 'evil' skin {YUMMM} extra crispy] and put about [six more or less] peeled whole garlic cloves in the cavity -nothing else. Roasting for a small to medium bird takes an hour about. House smells great, you don't get vampires or werewolves in the neighborhood and the whole chicken tastes of the sweet roast garlic taste.

Crock pots, for meats - you have to brown the meats first! Otherwise it looks like dirty gray glue on the outside. I use chicken broth canned and add water as needed. I find beef broth saltier and tastes kind of tinny. Once meat is done, you really can't tell the difference. I don't normally do crock pot cooking as it requires LOTS of planning, really.

A big chest freezer 'came' with our house when we bought it...It's been a long time 'running' as it was old when we got our house and the mortgage is almost paid off...I cook mostly for the 2 of us, and freeze in single or double portions what's left over...Sometimes I make Huge batches of beef chuck which I get on sale then cook and split up into a Cuban stew called Ropa Vieja [old clothes-not as bad as it sounds] and bar-be-que. Bag it or container it and freeze it...then microwave it. Whatever I cook..- I've always adhered to a philosophy of 'effort VS reward'...time spent, ease of putting it together and how it tastes....
Now that I'm not working, I'm getting and freezing all sorts of things at Farmer's Markets, right now it's early berries...Strawberries, blackberries and whatever comes next... Whatever I can get in season-I clean cut[if needed] freeze then bag - ASAP [freezing first-then bagging] enables you to take out some loose pieces as you need them -Process is also good for spicy peppers[freeze whole] and I just cut, bag & freeze tomatoes in season. I think I would be worse off health-wise were it not for that HUGE chest freezer in my big kitchen! When that dies tho [the freezer] I DO HAVE remodel plans - hope I can live thru that!

And BTW...I've always had a Nesco dutch electric oven, that cooks wonderfully on the tabletop. Roasts, chicken turkey veggies... all wonderfully tender.

It is not a slow cooker, but it does steam the food so flavors mix. I put garlic and various bullions in the bottom of the cooker under the rack and baste it with the juices. One can cook potatoes, squash, carrots, yams, all together.
My grandmother gave me her old one when I was married 39 yrs ago, and I replaced it 10 yrs ago with a new one finally. I even have one at the cottage, and we turn on the generator for it...;)

Some people (Breidjing) spent $1.23 on food for a week. Some in Shingkhey Village spent $5.03 a week. Then I looked at Germany where they spend $500.07 a week. My goodness, what a difference.

I noticed, in many photos, there was lot of Soda Bottles.
And I mean lots!!!!

And as far as the roaster. I remember seeing these on either QVC or HSN. They looked absolutely wonderful or roasting.

Some of you may remember that I love to fish. That is my favorite thing to do when I feel like it.

Quite a few years back, while my husband was working one night, I went to the lake and caught a nice, big catfish off of the bank... I came home, thinking I could put it in the bathtub in water and it would live until he could get home to clean it...NOT. It started turning blue, I guess because it couldn't handle the chlorinated water and maybe could not get enough oxygen...

OK. What to do here??? I took it outside and tried to kill it to death, by cutting off the head... I was bawling my eyes out and apologizing to the fish, because this is NOT a humane way to kill a fish, if you don't know what you are doing, and I sure did not know what I was doing.

Finally, with an electric knife, I was able to get the job done, so thought I would fry myself some catfish, which I could hardly even stand the thought of doing, since we had had such a close personal relationship...

Anyway, it tasted terrible when I fixed it... My husband arrived about that time and took one look at my culinary creation and about died laughing... I had never cleaned a fish before in my life, and didn't know that with catfish, you also have to skin them... Yuk... You cannot imagine how awful catfish unskinned tastes...

That has been quite a while back. We have a deal now though, he cleans, I cook...

Reminds me of when I first went to the Chinese fish stores (around my neighborhood, all the fish stores are owned by either Chinese or Vietnamese (their catfish comes from Vietnam) and they have live fish (big ones) swimming around in the tanks), as well as fillet of sole, flounder, halibut, shrimps, scallops.... you know, fish that's laying on the ice, and you bring it home, wash it in the sink, put your seasonings on it, and cook it.

Well, I go to this new store and all the fish are in tanks and while he had some fish on the ice, most fish were alive and in the tanks. A couple walks in (everyone is talking chinese, so I have no idea what they are talking about). The couple picks out a fish from the tank. The fish guy takes out the fish and as fast as you can say "hit me on the head", this fish guy takes out a mallet and pounds the fish on the head. I have never in all my life seen this done. I have always bought my fish, already dead, already skinned, and always ready to just be cooked!!!

So there I am standing and this guy just pounded the fish in the head and I blurt out "Oh my god, you just killed a poor fish" and the guy starts laughing and says "how do you think Your fish gets to your table??? Do you think it just flys out of the ocean and into your house??? I just stared at him.

He walks over to me and says "what kind of fish do you like? Look at this one!!!, I'll take it out and kill it for you and fillet it!!!!

I ran out of the store.

There has been so much information shared here that I'm reading each response faster and with more interest than the one before. I love this stuff. Thanks for taking my mind off of my pain for a while.

I do have something to admit. I hate shopping, especially groceries. My husband loves shopping, especially groceries because you can use coupons, lots of money saving coupons. He lives for the shopping trip that nets a receipt showing a savings higher than the cost of the groceries themselves! It's a wild night at our house when that happens - ha ha!!!

Kidding aside, he's a great shopper and rarely, and I'm not kidding here, rarely does he buy things that are not on sale. We moved into a small house when the kids were gone but it has a nice sized pantry. And there was room next to the washer/dryer for the extra fridge/freezer. So when the deals come into the markets, he's ready. Today, he bought 10 boxes of name brand cereals for $1.00 a box.

This kind of buying has, "saved our bacon" during those months when we DO spend more on meds than food.

I have a neighbor (who has become a friend) who lives across the street from me. I had put my hair in a cap to frost it and because I have arthritis, I couldn't finish the job of pulling the rest of my hair through the cap.

I made a quick phone call to my neighbor begging for her to come over and finish pulling the rest of my hair through the frosting cap. She could not because she was cooking. She said 'come over here".

So across the street I go with my hair (still in the cap) wrapped in a towel. I had never been to her house before. There she was in the kitchen cooking 18 lambchops. I thought she was having company for dinner. No she was not. This was for her and her husband. I sat in the chair and she finished pulling my hair out. Then she went into another room and said "Melody come and see what I bought".

So I follow her into this room and there are shelves and shelves of food. I mean, I have never seen so much food (except for the supermarket). It looked like she had a mini supermarket in this room. I saw 18 packages of spaghetti, 5 gallons of Oil, 20 packages of cookies. 10 boxes of Cake mix. 42 bottles of soda (I counted). I just stood there. I had never seen this before in my life. Now I live with Alan and if we have 2 bottles of soda in the house, it's a lot. I buy when I need to buy, except of course when I go to Costco and then I buy 8 cans of PAM.

So I look at my neighbor and you will never guess what popped out of my mouth!!!! I said "Are you a mormon??" She said "Am I a What????" I said "Well, mormons have to keep 2 years worth of food in their house at all times, it's a part of the way they live". I know this because I read up on all various religions and I find the mormon faith very interesting and they have their own website and they explain why they have to keep 2 years of food (I think it's two years, it may be more).

So she bursts out laughing and says "I'm italian and I'm catholic". I said "then why on earth are their packages and packages of spaghetti, 42 bottles of soda and all this oil????" Want to know what she said?


"Oh, don't you shop this way"!!!!

I never laughed so hard in all my life. She then took me over to a cabinet and opened up the top door and there were all presents. I said 'Oh my god, what are these presents?". and she said "Oh these were from my engagement party over 37 years ago". I said "What?????" She laughed and said "I've never gotten around to opening them up. God knows what's in there, blenders and mixers, and whatever....from 37 years ago".. I said "My god, you could sell on ebay".

Two years ago she calls me up all excited because she bought a Seal a Meal on Home Shopping or QVC. She paid $50.00. I told her "OH, that's great, you can cook in quantity, then seal it up and freeze it". She said "yeah, that's what I thought".

It's two years later, and she has yet to open up the box. I call her on this all the time. She laughs her head off. I told her. "Want to know what you have"? "You have obsessive compulsive disorder". "You're a compulsive shopper, you buy and buy, and you accumulate, (It's called hoarding, I watched an Oprah Show on this very topic). Imagine being in an actual house of a hoarder. I was absolutely blown away by all the stuff she had accumulated. She is extremely neat, every morning, she strips her bed, vacuums the underside of her box spring and then the mattress, and the re-makes the bed. Every single morning. I told her she can come and do mine if she wants. She laughs her head off. She knows if her husband has been in the sock drawers because every sock is positioned a certain way. Every drawer has a purpose and nothing is out of position.

Alan is thrilled because he said "Melody, if we ever have a war, or a drought, or anything, we know where to go for food or water". You have no idea how many gallons of water are neatly stacked up in her food room.

She once asked me if I could take a pair of shoes off of her hands. I said "sure, but why don't you wear them?" She then brought me into her bedroom, opened up the closet and there, right in front of me were 100 pairs of Easy Spirit Shoes that she has bought over the years. She has never worn them. If she puts a pair on, and they pinch her toes, they go right back in the box. And she'll go out and buy some more. I went home with two pairs of Easy Spirit shoes, $100 a pair. One black and one white. Thank God we wear the same size.

I did tell her, if by next year, you don't use that Seal a Meal, you are giving it to me. Somebody has to use this stuff!!!!! I get more gadgets because she as no more room to keep anything.

So Alan and I know that if there is any catastophe, we know we won't starve!!!!

I love this lady. And I lived in Idaho in a town that was 99.5% Mormon and she would probably fit right in. (I also lived in Salt Lake City which is now only 50% Mormon. We were there 15 yrs. and loved it.)

100 pairs of shoes?? She beats my hubby hands down. Unbelievable :-)

My Mum is a collector/hoarder of mass proportions. When I tell people how much stuff she has, it sounds like I'm exagerating. So I stopped telling people!

She just called me and said "did you know that Berta's is having a sale?? The store is going out of business and everything is 50% off!!!

My response: "Esther you are very dangerous to go shopping with. I'm going to tell your husband and he'll lock you up!!! We laughed our heads off. Imagine going shopping with her to a store that's going out of business???

She'll have more than 100 pairs of shoes, believe me.

Oh, and you'll love this. She has a think for spices. She took me in her kitchen and she opened up all the cabinets on the left side of her kitchen. There were 5 cabinets. Two shelves each. In each and every one of these cabinets is little bottles and packages of various spices from around the world. If you want a particular kind of ginger, or a special variety of pepper flakes, it's in her closet. She has absolutely every spice that Emiril (the guy on tv), makes!!! She also collects mustards. Do you know there is a champagne mustard? She also collects gourmet coffee. Every time it's my birthday, I know what I'm getting. Some kind of Truffle Gourmet Coffee. I still have it in my freezer. I put fresh coffee in my freezer because they don't freeze. It's all packaged nice and tight. Stays really well that way!!

She has spices from India. From Pakistan, from China. She goes on the internet and looks up food websites and orders from them. And can she cook??? Wow, can she cook. I have a little round lazy susan thing in my cabinet that holds my salt, pepper, garlic powder, onion powder and Creole seasoning. She puts me to shame with all her spices and gourmet stuff.

She even has Saffron!!!! Do you know how expensive Saffron is??????

I can't wait to see what she brings home from her next shopping trip.

Like I said, I hate shopping. One trip out with her and I'd be a raving lunatic. I have to go shopping tomorrow to just one store and already I'm a grouch. Truthfully, I stopped enjoying shopping when the PN started. It's hard to do all that standing and moving when your feet are on fire. I use the internet frequently to find what I need. Hey, if I didn't live so far away, I'd just have your friend do my shopping for me.

Who uses Saffron?? Would that be on Weight Watchers approved food list?

Now how did you know?. There were blouses (over the door on a hanger), with the tags on them. I said "oh these are beautiful" and she said "yeah, I'm waiting for an occasion to wear them". They have been on that hanger for years.

And saffron, (well, I beleive it's the most expensive spice in the world).

It's not fattening. At least I don't think it's fattening.

Actually I don't even know what it is. All I know is that she has every single imaginable spice in her kitchen. There must have been 300 little bottles and packages of spice.

And everything is in it's place. She knows if you move ANYTHING!!!

Oh, you will love this....She's a diabetic like me. She never controlled her sugar and would never even hear of going on Lantus (my sugar went from 400 to 80) I have been in a diabetic protocol in Cornell Medical Center for 2 years. Lost tons of weight. Well, I got my act together. I really had no choice. I still got neuropathy but I sincerely believe it could have gotten much worse. So I manage it strictly. I wanted her to go with me (to Cornell). She qualified for the program. She would have gotten all meds and strips and blood pressure meds (she's on different ones), for free.

She would not hear of it because it's too much work to go into NYC. from Brooklyn. I kept saying. But you'll save all the money you now spend on strips and co-pays for your meds. No Way!!!

Then she went to her doctor who told her to lose weight. What did she tell the doctor". "How dare you tell me what to do, my weight is none of your business". I told her: "You have got to be kidding, this is your doctor, it IS his business". She laughed and said "If my husband doesn't know what my weight it, why should my doctor". So forget about that idea.

But yesterday was the best. We were talking about podiatrists. She said to me "you actually let him cut your toenails".??? And I said "My dear, I'm a diabetic, I'm not supposed to cut my own toenails, and she said "I wouldn't let my podiatrist cut my toenails. I went to him last week".

So I said "If you went to him, and why indeed, did you go to him", why not let him do your nails." It seems she has an ingrown toenail that bothers her every once in a while. He did that one nail, gave her an injection,did the little piece of her nail, looked at her and said "my god, your nails are too long, I'm going to cut them". She said "get away from me, I do my own nails" and she walked out!!!!

But the best, the really best (and you absolutely won't believe this) was the conversation we had about the dentist. Now she knows I'm a dental phobic and she knows how hard it was for me to overcome my panic and finally see my phobia dentist in NYC. She is absolutely not a phobic.

But will she go to get a cleaning? NO way. This is exactly what she told me the other day (we have fascinating conversations by the way).

She bought a dental pic and she cleans her own teeth and she scrapes the tartar off all my herself. She said "my teeth look great, I took a big chunk of tartar off the other day". I just said "are you out of your mind?, you did not go to dental school, and if you nick the wrong place, you will get an infection and you are diabetic for heaven's sake".

She laughed and said "I've been doing this for 4 years.

So obviously we are talking about a person who has to be IN CONTROL here???

I think so.... But she and I get along just fine. We all have our quirks.

I just hope the dental pic thing doesn't bite her in her behind.

Mel, I would realy like to know why Mormons have to shop for 2 years worth of supplies. I find that very intresting, but I can't figure out what the reasoning behind that is? Is this one of their beliefs?

The Rocky Mountains American/Canadian is on my wishlist of places to see in my life. I am a bit fascinated with the mountains with their snow caps. I would really like to know what Utah is like? Is it rural? What are the seasons like?
