What are you having for dinner?
 
I thought it would be fun to post what we are going to have for dinner each night, you can even post a recipe if you would like.

I don't know for sure but I think DH and I are going out tonight so the kids will be having pizza. Last night we had chicken stew, it was like beef stew but with chicken and had cream of chicken and cream of celery soups for the broth part. It was yummy!

Tonight we are ordering out...probably pizza or grinders. Not much into cooking tonight.

Last night was leftover steak tips and rice. Nothing too exciting here in this household. :wink:

I would love to see some recipes to get myself out of the winter rut!

Friday nights are Pizza Nights for us. Thank goodness because I have been going at a slow pace today!!!

we are going simple tonight - heating up some Tuna Noodle Casserole that I had stuck in the freezer for a quick supper. Tonight seems like the perfect night since it will be a stormy one.

Gotta love that "Comfort Food"!

Today's Dinner -- Yumm....
 
Tonight I'm making Roasted Pork with Blue Cheese & Wine Sauce and Butternut Squash Risotto. (I know you're thinking "That sounds impressive, right?") Well, they're 2 pretty easy (sounding) recipes that I have recently torn out of magazines, and just couldn't wait to try. No, I don't love to cook or anything, but I do love to eat delicious food. Since I can't afford to go out to eat alot, I'm learning to cook the type of food I would normally order at a restaurant.

I'll tell you tomorrow how the recipes actually work out. :Starvin:

Homemade whole wheat crust, ricotta spread thinly first, feta and mozzarella on top of that, crushed minced garlic,minced purple onion, finely slivered red and orange peppers, baby spinach leaves, freshly ground coarse black pepper, and a touch of basil sprinkled on.

MMMMmmmm. I love it when the old man cooks! :p

He makes THE BEST PIZZA!!

I don't cook on Fridays or Saturdays. Yesterday I made Porkchops, potatoes, and green beans.

We usually eat out on Fridays or order chinese or pizza in.

Saturday is smorgasborg day. Thats where I get the leftovers from the week reheat and dig in.

Sunday is pasta day with the inlaws. (Sicillian) The whole family comesover just about every sunday!:eek:

It is so cold here today, and it has been a mixture of snow and sleet all day. So, I have decided it's a chili and cornbread day today! :D

Pizza Hut tonight.

On Fridays, I recently started volunteering from 5:00-5:30 to play "dinner music" at a nursing home. No time to cook, since I take a quick nap after work before I leave for that.

I don't feel so bad now, seeing everybody else that does pizza on Fridays.

We usually cook, but dh got on everyone's case today and we were all in a bad mood. I thought it would help mellow us out if we had one less chore - 2, if you count clean up.

We usually get carry out on Fridays. DH just left to go work out & then he's bringing back food from Applebee's. I loooove their fried chicken salad & I always save enough for lunch tomorrow!

Had to do my grocery shopping after work today so we'd have food in the house to cook this weekend. I was thinking of going the pizza route, but we stopped off at Culvers on the way home instead. :pizza:
Now I have to think of something to tomorrow..Maybe enchaladas?

Thanks, but I think that I enjoy doing it as much, or more, as they appreciate it. I've been getting out music that I purchased when I was in high school, and haven't played for 20-25+ years. Everything from relgious to Carpenters to classical to Elvis. It's fun!

Although I cook wonderful specialty food and desserts, DH is the bestest dinner cook in this family. His latest expertise has become Thai food.

Tonight it's chicken and oriental vegetables marinated in lemon grass.

Last night was restaurant called Kianti's. It's a "yuppified" version of Italian.

The food is good, the wine is good...

And if you time it right, you'll be there when all of the waiters put on a floor show to old 40's tunes (think Boogie-Woogie Bugle Boy of Company C) and right in the middle, they have two guys "throw" pizza. Except these guys are throwing the pizza behind their backs, under their legs, rolling the pizzas down one arm behind their heads then down the other arm...

The kids love it...and since I don't have to cook, *I* love it :Heart:

i make enchilada casserole. just rip up the tortilla's. mix everything up in big bowl. the sauce, can of green chili's..whatever you usually use. toss in pans...( i aways make 2 ) and top with cheese.

i even add some rice...black beans...spinach..

it's fast. using left over chicken is great. i got tired of rolling and rolling...

I make a great chicken enchilada casserole.

Sour Cream Chicken Enchilada Casserole
3-4 cups cooked, shredded chicken (about 4 breasts)
3-4 cups grated cheese –– (I like Mexican or Colby Jack)
1 cup sour cream
1 tsp garlic salt
1 can cream of chicken soup
1 med. onion (chop)
1 can of Rotel tomatoes (drained)
1 pack of taco shells (broken up) or chips

Mix all (but only half the cheese) in a bowl making sure the shells are all wet. Place in greased 9 x 13 casserole dish. Top with the other half cheese. Bake at 350 for 20-30 minutes, watch for the cheese to turn brown. Serves 6

caraba's for us. :D we got a gift card for christmas that has been burning a whole in my wallet.

my little guy came home sick with fever yesterday, but lil'monkey ( my 13 yr old daughter) is an awesome baby sitter. so the little time away should be fine. his fever is sticking at 99.

Can you believe all this sickness that has been going around? I don't know about your kids schools but one that 5 of mine go to had 80 kids out one day last week (I think it was on the news, a crew was out there Friday but I didn't see it on TV) and than sent a lot home throughout the day. All of my kids got the flu this year, LOL, as a matter of fact my DD had the 1st report case of the flu in our county and for our county schools. All the kids also got that nasty cold last week also. And than that stomach thing going around, all the kids got it, I got it 3 times and our cleaning lady/nanny got it 2 times.

grandmonkey got fifth's disease and then gave it to me over christmas. :( it has hit me hard. he stil has achey joints too.

yep...flu and strep are bad at his school. out of 18 kids in his class...7 were out sick on friday.

lil'monkey...at the jr high...it's like the plague hit.

hubby and were just talking about how many members at the gym have been sick..and getting sick again. :eek:

hey...don't breathe on me. :p

Oh and between my LP I had on 1-10 and all the sickness I've had I've been to the the ER 5 times between dec. 27th and last week. That's more trips to the ER that month than I have ever made in my life otherwise. :rolleyes:

Tonight we are taking the kids to Chuck E Cheeses. :D DH and I almost like it, the kids go off and play than when the pizza comes they come over and eat as fast as they can than off to play some more. DH & I can talk and enjoy most of the meal alone. :D

Today is ASH WEDNESDAY the start of lent. No meat today.

I love fish anyway can eat it more then meat.

We are having breakfast for dinner! Scrambled eggs with cheese, sausage (links and patties), leftover homemade yeast rolls (yum!), fried potatoes, sliced apples and orange juice. If it wouldn't keep me up I'd have coffee,too!
