What did YOU have for Easter Dinner?

I wanna hear about all the different foods you'll cooked or ate for YOUR Easter Diner......

I think its neat how we all have diferent traditions about the foods we eat for the Holidays.........

Let me hear it...............

sugarboo 03-23-2008 12:45 PM

Mother is taking us all out this year, something different. Don't know if I'll be up to it....I'd just rather cry....

He has Risen

Erin524 03-23-2008 01:03 PM

We're going out for Italian food at 230. The restaurant is one of the older Italian restaurants in town. One of the few left from most of the restaurants that started at the end of World War II. Most of the others went out of business.

The people who own the restaurant were from the original Little Italy area of town where my dad grew up. (Irish-Luxembourg kid, growing up in Little Italy...I bet that was an interesting childhood)

I already know what I'm having.

Fried ravioli for an appetizer. Spaghetti and meatballs, and garlic bread.

I miss the cheese bread that they used to make. They'd cover the bread in garlic butter, and then cover that in grated parmesean cheese. Then they'd fry it, put more butter on it and then coat it in more parmesean cheese. (ohmygosh it was tasty!) They dont do it that way any more.

It's too bad that they still charge for refills on pop there, and the glasses they use for pop are really skinny and not very tall. So, you get something like 3 sips and you're out of pop. (they put tons of ice in it too) So, I'll have to remember to just get water to drink. :(

SallyC 03-23-2008 01:33 PM

I haven't had it yet, but my DF will be bringing me a plate of Ham, Sweet Tators, Lebonese salad and Kibbee (lebonese lamb balls) and I don't know what for dessert.....Yummmmmmm:p

My Family is all out of town on vacations.:)

If I were cooking, it would be ham, plus all the trimmings..

Kitty 03-23-2008 02:23 PM

We're not eating till 6:30 or 7:00 PM tonight but we're having Honey Baked Ham and Honey Baked Roasted Turkey Breast, macaroni & cheese (my Mom's recipe that is SO good), roasted asparagus, deviled eggs, homemade yeast rolls w/honey butter and Angel Lush Cake for dessert. YUM!! Not sure I can wait that long!

CayoKay 03-23-2008 02:24 PM

we had bollos (tamales stuffed with chicken in sauce) rice, beans, and potato salad.

and big icy mugs of fresh-squeezed papaya juice.

kinda hard to have a traditional Easter dinner (our family's usual dinner was baked ham, scalloped potatoes, and veggies) here in the jungle, unless you raise a pig, and do all the processing and smoking at home.

:D

we're raising a pig now (Kevin Bacon) but he won't be the right size until early summer.

FlyFishin Momma 03-23-2008 02:44 PM

Kay Darlin..I want a recipe for those bollos..........they sound wonderful...

I was dreamin we went out for chinese but nnnooooo...I had to cook...
we all ate and you cant even tell it was touched.....lol..lol...

We had...ham, turkey both cooked together in the roaster oven....(so moist...very yummy) Cheese taters, broccoli & cauliflower, cream cheese corn, cole slaw, deviled eggs, creamed peas, yeast rolls, pineapple upside down cake and cho brownies w/ cho frosting and peeps on the top.

Anyone want some leftovers..........

DM 03-23-2008 02:46 PM

My Easter is the worst ever. Past Easters, my Mom would come and we'd cook a feast and she'd make the best Easter cake, with a green coconut lil nest on the side filled w/jelly beans. What I wouldn't do for a piece of her cake today.

I usually put about 2000 of the colored plastic eggs in my yard and people always stop and take pics. But, w/the weather so bad until recently, and not feeling well, this is the first yr I didn't do that either.

Gee, I'm kind of a downer on your thread, Kay.

I did put ribs in the oven for supper; does that count??

Hope you all have a warm fuzzy Easter and make many memories for years to come...

*can I come over Kell???*

FlyFishin Momma 03-23-2008 03:04 PM

Thanks for sharing MaryAnn..........
Not every Holiday is going to be perfect....thats for sure.......
We just make the best of it, move on and look fwd to the next!!!!!!

We took turns hiding and hunting eggs this morning...Kim and I for the kids first, then the kids for Kim and I...well they couldnt remember where they hid all the eggs lol....
we did find all but 1 hard boiled egg..........

I guess some lucky coon will have a nice suprise for easter dinner tonight.....lol...lo...

AfterMyNap 03-23-2008 03:21 PM

Well, as I speak, my little brother is swinging a knife and stirring something, my older brother is putting together some kind of appetizer tray and nephews are taking orders from the men. I'm sitting here watching them mutilate my kitchen.

At some point, we will sit down to broiled lambchops (sorry, Char:o), —I call it Lamb of God— some kind of funky salad, 12-grain crusty bread in a rosemary/butter drizzle, steam cauliflower with Bar-Scheez, two reds and my white TH, and what appears to be a lemon meringue pie.

That's about all the excitement around here, but it should be pretty good, this brother knows how to handle a kitchen.

Keely 03-23-2008 04:19 PM

We're going out to Ruby Tuesday's for their salad bar! :p

Every year I cook an Easter dinner, but this year wasn't up to it, and my poor DH has to do the clean-up, bless him, so we're treating ourselves this year by NOT doing any cooking/cleaning!

It snowed here all week, and the town Easter Egg Hunt was conducted in huge snowdrifts! Kids were digging in the snow for their eggs. The other two big events here are the Snowshoe Easter Egg Hunt (self-explanatory!) and the Downhill Ski Easter Egg Hunt for adults and teens....

We live in the middle of three ski resorts, and we don't even ski!
:wink::wink::wink:

AfterMyNap 03-23-2008 05:10 PM

Okay, dinner's over, it was delish the lambchops of God were perfection. One brother gone, one to go. Too much FB at my end of the table; heavily medicated and feeling fine. Anybody want my car, or my computer?:D I'd offer up my firstborn, but there ain't any of those!

ewizabeth 03-23-2008 05:48 PM

We went to DH's nephew's home for dinner, about an hour away. It was a beautiful, crisp, and sunny spring day for the drive. :) Our youngest son went with us and there were about 25 total at the dinner with some active tots for good measure. :D

We had baked ham, asparagus from their garden, brussels sprouts in a tasty sauce, a delicious pea salad, mashed potatoes with ham gravy, and chocolate and strawberry pies made by yours truly. ;)

I'm very full now!

DM 03-23-2008 05:51 PM

I just talked to DD in NC and she and her DH went to my sis's along w/niece and family and they had a huge Easter egg hunt in my Sis's backyard. Of course, my DD is a big kid herself, so she had a blast.

DH and I ended up w/fall off the bone ribs. So, the moral of my rotten Easter is~~~ I am so happy my DD had a great day and was able to be w/family. She has had a rough yr. And, DH and I are sitting here rubbing our full bellies.

When I was doing the blessing at dinnertime, I remembered what really is important today. Thanks Kay.

:)

soxmom 03-23-2008 06:25 PM

We went to my mom dads house. We had

a huge baked ham
au gratin potatoes
steamed asparagas
steamed baby carrots
sweet potato souffle
rolls and honey butter
polish easter kielbasa, not my fave, but tradition

for desert we had apple dumplings with vanilla ice cream and peanut
butter cookies -these deserts were made by yours truely:D and quite
yummy.

After dinner the teenagers hid the eggs for the little ones to find. It
was chilly but fun was had by all. We even played this fun game
my parents got the kids for easter.

Home now and very tired(even though I took a quick nap at about
10 a.m.)

Goooooodnight everyone.:)

Eight of us went out to eat. We went to a Greek restaurant and I had Tilapia with some different kind of sauce on it and Greek olives. Yum!
What I enjoyed most, visiting with dear friends. :)

MSacorn 03-23-2008 06:45 PM

I went to my sisters and another sister did the cooking there. She over did like our mother used to do. Lots of family drama but it was like having a gorilla in the room no one mentioned. Weird.

spiral slliced ham
homemade mac and cheese
greenbeans and spaetzle
broccoli w/cheese
corn
dinner rolls
heavenly hash
angel food cake w/crushed pineapple.

I didn't eat much because Dad made blueberry pancakes w/blueberry sauce for brunch and bacon. Yum. It's our cheat day on our healthy eating attempt.

I just went over for a bowl of mac & cheese. Might as well get the carbs in while I can. :D Now I'm overstuffed.

Going to stretch out and enjoy the quiet. Hope everyone had a good day.

Abbie 03-23-2008 07:55 PM

Corn
Peas
Veggie Tray w/carrots, celery, brocolli, tomato
Yeast Rolls
Fruit Salad w/pineapple, mandarin oranges, coconut, marshmallows, sour cream...
Apple Pie

Iced Tea

I'm glad the next big get together will be in the Summer when everyone can go outside.... it's snowing here today.

thecatsmeow 03-23-2008 11:02 PM

Had leftover ham for dinner. I worked today until 2 and when I came home I sat down and fell asleep. Never made it to MIL's.
But I was sent home a nice plate of food. Ham, deviled eggs, cauloiflower in cheese sauce and assorted other goodies. I may have to do this again. :) No muss, no fuss and a full belly!

doydie 03-23-2008 11:08 PM

Well it looks like ham and scalloped potatoes was on several homes menus. Ours here. We added my orange jello salad (which I am beginning to dislike but everyone else loves it), grean beans and rolls. You can tell we all have a sweet toothe because we had cherry delight, pumpmki pie, french silk chocolate pie, pecan pie apple struedel and several kinds of ice cream. The family is small at Easter, just the ones that live here in town except my SIL in Iraq.

I'll have to tell my sister that mac and cheese is part of this traditional meal. She makes the best.

Carolina 03-24-2008 12:18 AM

We had our traditional St. Patrick's Day dinner today. I was just a little bit behind all this week. ;)

Corned beef cooked in Guiness
Colcannon
Green Beans
Deviled Eggs and
Soda Bread with raisins

And Kay in the Jungle - could I please have the Bollo recipe too?

FinLady 03-24-2008 08:42 AM

Went to my in-law's yesterday for dinner.

We had a boneless ham with a sugar glaze
Easter bread, which melts in your mouth when fresh from the oven
Scalloped potatoes
Yams
Green bean casserole
califlower in cheese
pickled eggs

greta 03-24-2008 08:44 AM

leftover pasta and salad. How sad is that?! DH and I worked on the house all day and reheating was a better option than cooking!

Still, it beats last year when the dog ate both the rack and lamb and the turkey breast. (We ate Chinese takeout instead!)

SandyC 03-24-2008 11:31 AM

It was just Jim, me and the boys. We had baked spiral ham, sweet potatoes with marshmallows on top, fried veggies and oven rolls. For dessert we had razzleberry pie and peach cobbler. It was a good day.

Foggy Brain 03-24-2008 11:53 AM

Elizabeth (5) and I ate at my ex-MIL's along with ex-niece and nephews. Patrick (23) will be leaving for Iraq next week. We ate ham, mashed potatoes, dinner salads, wheat rolls, creamy corn casserole, and a fluffy strawberry pie for dessert. Oh, and A LOT of CHOCOLATE!! :D

Jappy 03-24-2008 03:51 PM

Went to my DD for Easter. She had about 35 people. She set up the
food buffet style. She cooked, I cooked and everyone that came brought
something. The List

Baked Ham
Baked Sweet Potato Souffle
Chicken breast stuffed with gorgonzola cheese
4 veggies baked in cream sauce
Fried Fish ( Talipia) & tartar sauce
Navy Bean Soup
Cole Slaw
Seafood salad
Baked Rice dish with sausage

Appys were Grapes, Cheese, kelbasi, crackers, smoked trout dip deviled eggs

Desserts Apple Pie, Cherry pie, blueberry pie, Bunny rabbit cake,
Black Forest Cake, Panatonne (Italian Fruit Cake)
Cheese Bobka (Polish) Crusiki (Polish deep fried treats)
Chocalate Cake, White Cream filled Cake

This is what is great when you have everyone bring something
different.

It was a good day except for the cold weather.

Jappy

Victorya 03-24-2008 08:17 PM

We go to my parent's house every year for Easter.

And my mother is..well..how should I put it...THE WORST COOK IN THE WHOLE ENTIRE WORLD!!!

The only thing that she can't ruin is corned beef...'cause she puts it in the crock pot!

So for the past few years, we've convinced her that we love her corned beef and cabbage soooo much, that we can't imagine anything else for dinner on Easter (and Thanksgiving and Christmas...and just about anytime she cooks for us!)

You should have seen the smile on my mother's face when we sat down to dinner. There we were...the family that BEGGED her to cook her corned beef with cabbage for Easter dinner!

it's the MOST disorganized "recipe" on the planet, complete with happy cooks making messes.

:D

doydie 03-24-2008 10:39 PM

Finlady.....what are picked eggs? All I have ever done is deviled eggs.

FlyFishin Momma 03-24-2008 11:15 PM

Do you mean "pickled"???

Pickled eggs are eggs that are hard boiled, shelled, and then placed into jars of vinegar, salt and other assorted spices. Similar to pickles.
http://en.wikipedia.org/wiki/Pickled_egg

I used to like them, until an unfortunate experience with food poisoning that ruined me for eggs for the rest of my life... Sometimes I can stand poached eggs (with the yolk removed and with lots of salt on it to drown out the taste of the eggs)

Twinkletoes 03-25-2008 01:52 AM

The best part about our Easter dinner was...

...I didn't have to do a thing! :Dancing-Chilli::Dancing-Chilli::Dancing-Chilli:

Came home from church and napped until it was time to eat!!! (FYI: I'm still playing the "broken leg card" and it has worked beautifully!

DH BBQd marinated turkey steaks (YUMMY!) and Dutch oven potatoes. Kids brought potluck. :Starvin:

I didn't even have to clean the kitchen! :D:D:D

After my leg heals, I think I'll keep my crutches handy for those times when I just don't feel like doing anything. :Head-Spin:

Bannet 03-25-2008 07:50 AM

Sorry I am late posting Easter Dinner Menus. I am still recovering LOL.

Some how I was volunteered to do easter. I had 40 people in my house Easter Sunday:eek:

Menu was:

Honey Baked Ham
Cheesy potatoes
Garlic Salad
Home made Italian Bread
Macaroni Salad
Strawberry Pretzel Jello (mmmmmgood)
Pistachio Pudding fluff
Death by chocolate cake
Wine
Beer

Both Families Mine and DH came. It was a nice day especially having my grandkids here but boy after everyone left I was Pooped.

Nieces and step daughter cleaned up the kitchen for me and the boys put away all the table and chairs.

Topped it off with a nightcap of blackberry brandy and hit the sheets. I was out before my head even hit the pillow;)
