Potato salad
 
I just made potato salad - I LOVE potato salad! It is like spaghetti - there are a million ways to make it. I put green olives in mine. So does Alffe. She gets the prize for the best potato salad in the world!

Potato salad IS wonderful .....
So is broccoli salad.
Tomorrow there is a little "affair" at out church and we all received the notice on our computers............ I got a special phone call asking that I bring my brocc salad. LOL

I boil the potatoes and chunk them up putting dashes of vinegar and salt on them. Then I add chopped. hard-boiled egg. chopped green olives, chopped sweet onion. finely chopped celery and globs of Helmans mayo. Mine is good but you should get Alffe's recipe. For starters she boils her potatoes til they are almost mashed. Make her tell!

Ok, it's a good thing I'm not hungry or I would be! Thanks for the compliment Barbo but yours is every bit as good, just different than mine.
I do boil the potatos in their jackets until they fall off...and while they are still hot, I add everything else....no vinegar but lots of dillweed.

I'm trying to stay up until dark but not sure I'll make it.....so tired!!

Yum! I like potato salad but hubby doesn't! :(

He does like what I call "Potato Bake" though, so now that you've helped me remember, I might make some of that for him. :)

I don't know what it's real name is, but I slice potatoes into scallops and layer them in a dish with chopped ham, spring onions and grated cheese. Then I pour over a small bottle of cream, top with cheese and put it in the oven to bake. Extra Yum.

*grin...and right good company she was too! Your potato dish does sound yum...reminds me of scalloped potatoes I make without the ham and with two kinds of cheese.

If you've never made potato salad before and want to try a quick easy recipe, you can buy a store bought salad dressing and pour it over diced cooked potatoes, with a little chopped fresh mint leaves stirred into the mixture. Some people prefer parsley; it's a matter of taste.

A nicer but equally easy one, is to combine a tin of sweetened condensed milk with a teaspoon or so (depending on taste) of mustard, and enough vinegar so that the mayonaisse tastes nice to you. Mix together until smooth, then pour enough of the mayonaisse over cooked diced potatoes to make the potatoes just moist. If you like mint, stir in about a teaspoon of freshly chopped mint leaves.

Barbo was right....there's a kazillion potato salad recipes out there!:D

Now if Moi was on, we'd be having that mayonaise conversation again and he'd be sending out accolaids for "Duke" mayo while I'd be shouting out there's no mayo like Helmans mayo...like no mayo at all. :D

i love MW too wren LOL...... but i do use Helmans on my potato salad with just a touch of mustard to add a bit of color to it and lets not forget a few dill pickles LOL

I love mayo too. Just like precious Goofy I use MW and Hellmann's ..... I use both. They are not interchangable but both are vital. I have both in the pantry. I just made my brocc salad and, of course, used the Hellmann's.

In addition to the salad I made some of my "cheese sandwiches" .... oh, wow, I'm gonna win some points this afternoon. And I used yet another yar of mayonnaise .... that's 3 in one day.

The brocolli salad with MW..is GROSS. Made that mistake when I was out of mayo.

When you need a tang..MW it is..when you want creamy mellowness..mayo.

I'm a non pickle eater. So no pickles in my potato salad. Lots of flavor and spices. Kinda like an egg salad with potatos.

This was my Mom's recipe.....I still make it today but it never tastes as good as hers did. Even when I use the exact ingredients.....:rolleyes:

Red Potatoes, washed and unpeeled
Chopped Vidalia Onion
Chopped celery
Sweet Pickle chips
Bacon, cooked crispy and crumbled
Hard Boiled Egg
Dillweed
Salt/Pepper
Yellow Mustard
Blue Plate Mayo


Boil whole red potatoes until tender. Drain and put in fridge to cool.

While potatoes are cooling mix chopped onion, celery, and hard boiled egg together.

Once potatoes are cool dice into bite sized pieces, leaving the red skin on. Once potatoes are diced add onion, celery and egg mixture. Toss until mixed. Add two big dollops of mayo (or to taste), about 1/4 cup yellow mustard (or to taste), a couple of spoonfuls of sweet pickle chips and a little sweet pickle juice to make it easier to mix. Mix all ingredients well. Add crumbled bacon and about a small palmful of dillweed (or to taste). Mix well.

Can be eaten immediately or chilled. It's great either way.

OK....now I'm really hungry!! :o

Raw. Cut up in small bite size pieces. I like them pretty small so I can get a bit everything in each bite.

Wren adds cut up grapes sometimes too.

I like to make it the night before, but leave out the bacon and sunflower seeds. Toss them in when ready to serve, so they don't get mushy.

If you have any left over cauliflower or boccoli flowerettes, make a cheese sauce.... pour sauce over, add a little grated cheese on the top.... and bake in the oven.

This one goes well with lots of main courses at dinner time, and is one that can be made ahead, even the day before.

Edit : You can add other vegetables if you like. I add sweet potato to mine.

Now I'm really hungry!!! For my potato salad I put the peeled boiled potatoes and boiled eggs through a ricer. Then add mustard, miracle whip, celery seed, sweet relish, lots of chopped onions. Chill in fridge. My family eats it up fast!:)
