Vegetarian Grilling Recipes - Help

DD17 is having a graduation party and has several friends that are vegetarians. We finally decided to do a BBQ - grilling hamburgers, maybe hot dogs, and something for her vegetarian friends. Do any of you have some great recipes for grilling either tofu or veggie burgers? Do you make your own veggie burgers or do you buy them?

Any suggestions would be great! Thanks!

There's lots of recipes on the web! My DSD makes her own but I don't have the recipe she uses.

I used to just buy portabella mushroom caps (the large ones), brush them with olive oil and sprinkle spices all over them and grill them. They go on a bun with the same condiments ( ketchup, mustard, relish, onions, cheese, etc.)

Have fun at the BBQ! I've got a spider stuck in the gas line on my grill and have to do some cleaning before I can grill anything!

DD17 and I tried a recipe last night that was really good. Although I don't have a grill to grill the veggies, I did broil them and it still came out good. However, my brother, who is an awesome cook, is making some sort of roasted veggies so I need to figure out something else.

I don't even know what goes in a veggie burger but I will search the web and see what I come up with. Thanks, RW!

We do have both of those here. My parents go to Costco a couple of times a month. I'll have to go with them next time and pick some up. That would be so much easier and save me some energy.;) Thanks!

I can't really help with the vegie burgers or tofu, but there are other things they would also enjoy I'm sure.

Stuffed mushrooms as mentioned.

Corn cobs in foil ... could make a special sauce or mayonnaise to drizzle on top if you didn't want them plain.

Stuffed potatoes ... steam potatoes in skins until just tender. drain and cool slightly. cut off the top of pots and scoop out the pulp and mash. cook some spinach. add grated parmesan cheese, shallots and a dash of nutmeg. mix it all up with the mashed pototoes. place each potato in foil securely wrapped. Barbecue until heated all the way through.

Could make little vegie parcels the same way. A mix of steam vegies with some butter garlic and herbs (like basil) and top with cheese.

If they are vegan leave out all the cheese and butter

Stuffed zucchini or stuffed tomatoes.

asparagus cooks nicely on the barbie.

could make fruit skewers. Pineapple cooks great on the barbie too.

Great ideas Lara! Those potatoes sound yummy as do the others. Thanks.
