i found this recipe and made it last night. YUM. i did use canned. i wouldn't worry about doing the peeling and seeding or even using fresh unless you still have a bunch. it was very fresh tasting. i think it would be good with chicken stock or veggie stock instead of the tomato juice. just for a change.

That sounds wonderful! Will definitely try it when we get back. Am up to my elbows making cereal snack....it's better if it sits for a couple of weeks.
