I accidentally baked a cake!!
 
I didn't start out to make a cake.

The recipe was for SIMPLE HOME-MADE MUFFINS.

you know, the little 6 muffin pan thingee.

A friend called me up and I got distracted and instead of using 2 cups of fat free milk, I used a whole quart.

I mixed up the ingredients and as I poured the liquid (and it was liquid ..let me tell you), I looked at it and said "why on earth is there so much liquid, THIS IS NOT BATTER".

Then I realized that I had too much fat free milk.

so I took the stuff, dumped it back into the mixing bowl, added more flour, added more baking powder, added more egg replacer, and I called my friend and I said

Help!!! what do I do, (and after I told her, she burst out laughing).

She then said "how much baking powder did you use?" and I said

Maybe 4 tablespoons!!!

she said "oh my god, that thing is going to rise like crazy".

So she said to bake it for one hour and put the knife in and see if it comes out clean.

I did and it did.

I then cooled it and served it to Alan.

Oh, want to know how big this was? I poured the batter into my chicken roasting pan. I don't make chicken any more, but I still have those aluminum pans.

This THING ROSE like crazy.

Alan took a bite and said

"This has no taste"

I tasted it and said "you're right'.

I then went into my fridge and took out my reduced sugar chocolate cake frosting and smeared it on his piece.

He went nuts and ate two pieces.

I've accidentally done a lot of things, but accidentally bake? Nevah! :D..AZjanie's right. Nice save!

OMG...too good. I can't remember all my cooking blunders but I do remember once I did make some cookies that called for baking powder and by accident I used baking soda...in the garbage they went.

Oh, I forgot...I used to do a lot of canning. I was doing some pickling and so I was using a large amount of salt. I put the salt in a small canister and put it on the counter with all the other canisters. This happened to my prier husband not my Olhipie...We were having company over for supper and I asked him to make up some cool aide and so he got it all mixed up and poured him a big ole glass and drank a few gulps of it before he realized that something major was wrong with it. You all probably all know the rest of the story…he had used a cup of salt instead of sugar…ugh…lol…:thud:

that is so funny!!

I find it amusing that I'm learning to cook all these things at the age of 61. And growing my own stuff in the kitchen too!!

This morning, my friend called me and said "how was the cake?"

I told her "not bad, it's as big as the TITANIC".

We laughed.

I tried a piece last night. Two hours later, it raised my sugar, so you know I won't be having any of this cake again.

Muffins don't seem to bother me.

I guess some foods do and some foods don't.

I shall continue to make and find new things to eat.

Even at my age!!!!

Oh, I made something interesting for Alan last night.

I had taken some fresh broccoli, some fresh carrots, an onion, and put them in my food processor. I added some garlic, and then I added some of my sprouts (broccoli, fenugreek, WHATEVER I HAVE), i just added a handful into the mixture.

I added the egg replacer (instead of eggs), and some no salt breadcrumbs.

I made the mixture and formed a nice side pattie.

I put some vegetable oil in a pan, let it get hot, and cooked the pattie on one side, and flipped it over.

About 10 minutes cooking time, it was nice and crisp and cooked all the way through.

then I put some of my home-made tomato sauce on it and simmered for afew minutes.

then I put it on a plate and added a slice of my quiche and Alan went to town.

His remarks?

"I have no idea what this is but you can serve it to me tomorrow night." "WHAT IS IN THIS PATTIE"?? I just said "my veggies and my sprouts".

He loved it!!!

Thank god, I am finding more stuff to eat and we don't get bored.

Hey, I'm lucky I can speak on the phone and stir my milk (making it into yogurt) at the same time.

It's just being finished right now.
