I am a crazy woman.....

I jsut got done putting groceries away from an impulsive shopping trip to the local grocery in a fit because I thought there was only 2 days left to thanksgiving...sigh
I will be making spinach mashed potatoes, pecan pies, jeff is making oyster dressing and we are going to our friends house about 3 1/2 hours away and spending the night.
my friend said the kids would like root beer in bottles and oreos and marsh mellows for the fire pit. they are treats so picked them up as well as the ingredients for the above items, only thing left is the fresh oysters jeff need to call his mother to get the full details about them. our local store stayed open until midnight all week, the store was quiet and very stress free.
bizi sho is going to bed now.....

Dear Beth,
You've been productive and got a lot done. :D
I don't think I have ever had spinach mashed potatoes. I need to find a recipe for hubby -- except maybe a green different from spinach :p

Enjoy the fire and the kids.
Do they have pets too? It will be a full Thanksgiving.

The original recipe was my mothers....Alffe
I added the garlic and use red potatoes instead of regular ones and I leave the skins on, very pretty for the holiday season!
Mari, I suppose you could use any greens, mustard or turnip or collard greens.

HI,
In my part of the South, we use Mayo for stuff like that. :)

It substitutes for everything. (I don't suppose you can get Mayo, Waves?) If one were really motivated, one could make homemade Mayo, but I suppose yogurt or a mixed of various butter and milk products would produce better tasting results than Mayo.

'Found this on yahoo:

For each cup of sour cream, substitute:
1. 1 cup plain yogurt
OR
2. 1 tablespoon lemon juice or vinegar plus enough cream to make 1 cup
OR
3. 3/4 cup buttermilk mixed with 1/3 cup butter
Also Creme Fraiche

we don't keep mayo any more... we don't use it enough to justify having a jar of it.

This i can get but i think here it is "fraiche" - as in fresh cream, and not sour, lol. i'll think about it. my dad is not crazy about sour anything anyway he detests yogurt and can usually detect it in just about anything. i'm actually thinking of a small modification towards skipping anything that is sour - using just creamcheese and indeed the fresh cream.

thanks for the suggestion, Mari. That was helpful.

i will definitely keep the garlic... but might revert to regular potatoes... for economic reason. Perhaps a dash of mild paprika on top for color... seems it would fit ok flavorwise.

lol... and i'll stick with spinach. my dad also has an any-other-kind-of-green detector ... he doesn't like them! ;)

thanks Beth!

I am still stunned that you can't get sour cream there. the butter milk seems like a good substitute.

:ROTFLMAO: keep being stunned...

...can't get buttermilk either!!!:ROTFLMAO:

:rm_milk: heheh. some things you just take for granted... until you walk into a store and realize, you don't know the foreign word for what you want, you try to describe it to them, they finally get it and say "oooh, that stuff 'foreigners' use [tell you the word] ... sorry we don't keep that, there is no demand for it."
:thud:
(hello, i am standing in front of your face, "demanding?")

btw, my mom just said she has seen sour cream somewhere, but when i searched for it i could not find it. i remember having at IKEA, on their lunch plates, so perhaps they sell containers of it too, but that is waaaaaaaaaaaaaaay out of the way for me. there may be other places that sell either one... but the fact is... these are just not common grocery items.

in any case, there is the human factors issue too:

while i love sour cream with potatoes, i think dad would be better off if we avoided anything sour... so the substitution issue becomes somewhat moot. :o both parents will have issues with the skins i'm afraid even on new potatoes... :o

... the sad bottom line is, while i might be able to swing a modified recipe and they might even like it, i won't be able to really try Bizi's Spinach Mashed Potatoes until i am... in a different living situation. :(

i will keep your recipe. :o
