Dinner Recipes
 
I got the note today that indicated a desire to post and have some dinner recipes. I'm not sure why it hasn't been created before now... maybe people are just shy. :wink:

Anyway, here it is.

Newbies... don't forget... dinner can mean breakfast! :cool:

Ropa Vieja
1 3-1/2 pound beef chuck roast

Brown the chuck roast (salt and pepper to taste) in 2 Tbls little olive oil, add 1 cup water and simmer for
about 2 1/2 hours until very tender. Don't let the pan run dry.

Remove from the pan, shred the meat, and add the pan juices. Set aside.

Reheat the pan, and add some olive oil.

Saute until clear:
1 large sliced onion
2 cloves of garlic

Add, and saute a little longer:
1 green pepper, chopped

Add final ingredients and simmer 20 more minutes:
return meat/juices
8 oz tomato sauce
1 t. salt
1 bay leaf
1/2 cup dry wine (I use burgundy)

Serve with rice (I use turmeric for yellow rice) and black beans.


Hungarian Goulash
2 pounds beef stew
1 med onion sliced
1-2 clove garlic
2 T oil

1 1/2 cup water
1 cup ketchup
2 T L&P Worcestshire sauce
1 T brown sugar
2 t salt
2 t paprika
dash red pepper (optional)

1/4 cup water
2 T sweet rice flour

Brown beef in oil with garlic and onion. Drain. Add remaining ingredients and simmer covered on stove top 2 1/2 hours (or in oven at 325 degrees for 3 hours).

Mix water and flour, add gradually to stove top pan, heat to boiling, stirring constantly...one minute until thickened.
Serve with noodles.


Porcupines
1 lb ground beef
1 cup water
1 cup instant rice
seasoning (salt, pepper, garlic powder)
chopped onion (optional)

Del Monte Traditional Spaghetti Sauce

I use a two inch scooper and fill a casserole dish with the porcupines uncooked, and cover in a can of Del Monte Traditional Spaghetti Sauce.
Of course, any gf sauce would do, but this makes it a breeze.

Bake covered in a 350 oven for one hour. Remove cover for the last 15 minutes.


Sloppy Joes
Brown and drain:
1 1/2 pounds ground beef
1/4-1/2 cup chopped onion
1/4-1/2 cup chopped celery


Add and simmer 15 minutes:
1/2 cup ketchup
1/4 cup water
1 tsp salt (opt)
1 Tablespoon L &P worcestershire sauce (opt)
1/8 teaspoon red pepper sauce (opt)

Serve with gf buns, or try as an alternative pizza topping!



Stuffed Peppers
1 lb lean ground beef
chopped onion
fresh chopped tomato
McCormick Taco seasoning mix
Contadina tomato sauce (16 oz)
1/4 cup water

Brown ground beef, and add other ingredients, and simmer.

Prepare Minute Brown Rice for six servings.

Slice 4-5 green peppers lengthwise, and lay out flat in a sprayed 9 X 13 pan.


Oven Fried Chicken
1 cup gf instant mashed potato flakes
1 t salt
1/4 t pepper
1/2 t Lawry's seasoned salt
1 egg slightly beaten

Heat oven to 375

Combine dry ingredients in plastic bag. Dip chicken in egg and shake in mixture. Place chicken in ungreased baking pan, and bake uncoverd for 45-60 minutes. Cover with foil and bake at 350 for 40 minutes.


Chop Suey
Brown 2 ˝ lbs. chopped pork stew meat, add 1 cup water, and simmer 1 hour.

Melt one stick of butter/margarine, and sauté:
3 cups chopped onion
3 cups chopped celery
Add onion/celery to pork, add additional ˝ -1 cup water if needed, and simmer 1 more hour.

Add:
2 lg cans Chinese Vegetables (drained, save juice)
1 15 oz can bean sprouts
2 cans sliced water chestnuts
1 lg can mushrooms

Add, and heat until thickened:
3 heaping Tbls cornstarch to saved vegetable juice and blend
3 Tbls gluten free soy sauce
2 Tbls beaded molasses
3 Tbls butter/margarine

Serve with rice.


Spaghetti Dinner - Our Favorite Quick Meal!
1 pkg Tinkyada Brown Rice Spaghetti -Prepare by package instructions
1 lb ground beef, browned and drained
1 can Del Monte Traditional Spaghetti Sauce
I box Scharr Bread Sticks (worth the splurge!)

Corn dogs
 
This is GF, but not CF.
I used the Maseca brand corn flour for tamales.

2 cups of Maseca
2 cups lukewarm broth or water
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup lard or vegetable shortening. I used margarine instead.

Combine the dry ingredients with the liquid in a bowl.
In a separate bowl, beat shortening until fluffy, add masa dough and beat until dough has a spongy texture.

Using a spoon or your fingers, scoop up masa and spread over a hot dog with your fingers. Coat each dog with masa dough. Once they are covered, you should be able to lightly roll each between your palms to smooth out the covering.

Fry on all sides in a lightly oiled pan. You could also deep fry, but I opted for a lightly oiled cast iron fry pan in order to cut down on the greasiness. After all, there's already a ton of grease in the dough itself. I also tried steaming some of the corn dogs, like tamales would be steamed, but was not pleased with the result. They need that crunch frying gives them.

I found lots of GF recipes on the low carb section of about.com Here is my modification of one:

1/2 lb gf italian sausage
1/2 lb ground meat (I used turkey and have used deer (we are hunters))
italian seasonings to taste
gf pepperoni
chopped onion (I used a half an average size one)
chopped green pepper (1/3 of one since my DDs don't like it much)
cheese of preference for pizza

Brown sausage and meat together in over proof pan (I used large cast iron skillet). Drain. Add 1/2 of onion and all green pepper. Saute until onion is translucent. Turn off heat on stove. Turn on oven to 350F. Add remaining onion to pan along with spices. Top with pepperoni then cheese. Pop in oven til cheese is bubbly. Serve over noodles, bread or plain.

Note: This is not enough for my family. I have to double the recipe for the four of us by my girls eat like adults.

I take leftover roasted sweet potatoes add bell pepper strips if there aren't already enough w/the sweet potatoes, and fry them up in a skillet with 3-4 eggs. Kind of like a "hash" with sweet potatoes instead of white.

Dh makes bacon to have on the side of his. I serve dd a salad (I'm not up to raw foods yet, *sigh*) I like a little cheese with it too, but its really good without.

Well here is a GLUTEN FREE British recipe that I created, enough for 4 people :

Time to make: 30 minutes+30 minutes cooking time.

You will need :

1 Med. Size Oven proof dish
2 Large White potatoes
2 Sweet Potatoes
500g Fresh Mince Beef
2 Cloves of Garlic
Salt
Pepper
Dried Sage
Dried Oregano
Dried Thyme
Tomato Ketchup (Heinz is gluten free)
Onion Gravy Powder (Bisto in the glass jar is relatively ok)
Vegetable Stock (Knorr veg stock in jelly form is GF)
Milk
Cheddar
Garlic Soft Cheese
Mozorella
Fresh Tomato
Fresh Parsley or Coriander
Butter
Oil
1 Red Onion
Brown sugar
Gluten Free Flour
Cayenne Pepper


1) Set the oven at 180 degrees.
2) Slice thinly and boil the potatoes.
3) Put butter and oil in a frying pan with 2tsp of brown sugar, use a low heat to caramelize the onions.
4) When onions are browned add the beef.
5) When the mince is almost cooked through add 2 crushed and chopped cloves of garlic, a little salt and pepper, dried oregano, sage and thyme.
6) Cook for a few seconds then sprinkle on the onion gravy powder.
7) Add a Knorr Veg stock soft cube, or some other vegetable stock cube (no water).
8) Add enough milk for the ingredients to stop bubbling, then immediately turn down the heat.
9) Add a good squirt of Tomato Ketchup.
10) Allow to simmer.
11) Pour sliced potatoes out into a colander and allow the steam to partly dry them.
12) Put a little butter, oil and cayenne pepper in a small pan, then while stirring continuously, add 1 tsp of flour, then a handful of grated cheddar, then some milk, then more flour, then milk, keep this up until the quantity is enough. Keep boiling and stirring until mixture goes thick.
13) Immediately remove from heat, mix well and leave to stand.
14) Take your oven proof dish, pour the meat mixture in and flatten.
15) Alternate a slice of white then a slice of sweet potato, slightly overlapping until meat mixture is covered.
16) Pour over the white cheese sauce and spread flat.
17) Cover in grated cheddar.
18) Slice mozorella and alternate that with a sliced tomato down the middle of dish.
19) Blob random slices of soft garlic cheese on.
20) Sprinkle over chopped fresh parsley or coriander.
21) Cook for half hour.

Tip : Allow to stand for 10 mins before serving, it stops it being sloppy.
