Thank you all, I am having a lovely day. Both my sisters called me this morning and my children showered me with gifts in the mail. *grin

I am not not anywhere....too cold! I have a new recipe I want to try, "Salad with deep fried Manchego cheese and a Madeira Reduction"...but I have no madeira wine in the house..:D Any suggestions on what I can substitute???

I know what Madeira wine is, but what is a Manchego cheese??LOLL

Alpho, there are four types of Madeira wines, do you know which variety was recommended??

If you are needing the "Sercial" type which I have tried, it has a slightly "roasted coffee" taste to it.

So, maybe adding little bit of coffee and to whatever wine you are using??
