I think that I am craving sweet potato pie.
I might have to make it myself because I want one that is low-ish carb.

I looked up a recipe... found several very similar to this one:

Is that about how you do them?

I am wondering .... do you think it would "work" without the sugar? I think I'd probably prefer an unsweetened, lightly salted variant, but I don't know if that would turn out properly. Is some sugar is needed to help the eggs absorb the juice? Thoughts?

Hubby has been meal planning for when my parents come Friday.

He bought some canned Baba Ganoush that he will doctor-up with some fresh ingredients.

Never mind that it is easy to make from scratch and that it is available fresh in lots of places around town.
I have decided to mostly leave the food up to him.
He seems to like planning and I do not care one way or another what anybody eats as long as it is more or less palatable.
