Curious....

I'm fixing velvet corn soup...so named because it's full of butter, real cream, a chopped onion, a beaten egg and lots of fresh corn kernels....you puree it and then strained the heck out of it. To serve, in each bowl you float 1/2 yellow cherry tomato (seeded) 1/2 red cherry tomato (seeded) one small sweet basil leaf, AND da dah! a sliver of pickled red chard stem! Yes indeed...they turned out fine.

And panini's to go with it. Dessert will be peaches & blueberries with balsamic cream vinegar mixed with 2 tbls sugar...topped with cream that's whipped with mascapone cheese. :D

And now we all know why I'm fat! :p

And remember....you asked. :D

Curious 10-11-2007 08:41 AM

i know messing with a recipe when company is coming is not a good thing...but have you tried modifying it? hehehe...test on mr alffe.

i use the not fat heavy cream a lot. land-o-lakes brand is the best here. it really adds the creaminess and i haven't noticed any taste difference.

boy do i know how hard it is alffe. i love to cook and bake. doing it daily for all the meals for everyone here...well...it is soooo hard to not nibble...then eat my part. :o i'm turning from a monkey into a rabbit. i keep a big bowl of fresh veggies to munch on. if i didn't...i would balloon up.

special meals...that is the time to go all out. it makes food enjoyable and feels so good when people like it.

you know what sucks? my family prefers my cooking and never want to go out to eat. :( they also never give me any ideas what they want. i think it's weird. i wouldn't want somebody else always picking what i want to eat.

i would rather have my extra weight from good food like your dinner...than from bags of chips. :D so what time is dinner?

they're coming at 4:30 and I have plenty of room so what time shall I expect you? *grin

I've used Land of Lakes in soup before and it's good but I don't want to tamper with this recipe....it took me too long to make the dang pickled chard.

Cooking for just Mr.Alffe is so boring....he'd eat home made pizza every night if I'd cook it. He doesn't like seafood, picks the fresh herbs off what ever I put them on. I love him dearly but!!!....I want company over alot. *grin

by the way...do you have a recipe for tomato basil soup?

Curious 10-11-2007 09:25 AM

i have a really good tomato and sweet red pepper that i add basil..you want that one? it's a cream soup. :D

Alffe 10-11-2007 02:40 PM

Well I'd love it but Mr.Alffe doesn't like red pepper either.
Meat and potaotos, carrots, pizza and anything chocolate. *grin
Oh, and it can't look like an animal part...no legs, wings, thighs, ;)

Curious 10-11-2007 02:50 PM

i'll take a look at my recipe, but i'm sure you could just use tomatoes and omit the peppers. lol...i'm not known for following recipes to the T any ways. it has a chicken stock base, so it it's easy to change up the herbs.

i'll email it if it's too long to post.

i don't know how i lucked out...but hubby, lil' and grandmonkey eat everything except pickles and mustard. the more mushrooms, onions, peppers...the better.

My mom makes a good tomato basil soup. I just checked in my hand-written recipe book from her and I don't see it there, but I can ask her for it if you would like me to.

Alffe 10-11-2007 08:30 PM

I'd really like you to do that. *grin

Good thing you 'wondered' if I had seen your reply here. I'll ask Mom and maybe Dad will scan it over to me.

:)

That soup sounds yummy. May I have the recipe, please? Dad loves to cook and grows fresh basil, so I'm sure he'd love to give it a whirl. Especially now that the weather has cooled, finally.

Thanks in advance.
