GF Pumpkin Pie
 
I got this note from my neighbor. Does anyone have this gluten free pumpkin pie recipe? Grace

Hi Grace,
I have a favor to ask WHENEVER you have time to check for me. When Philip 1st went on the diet, I found a recipe for Pumpkin Pie that he absolutely loved. I think I found it on that hastypastry website, but now I can't seem to get there. It used pulverized Honey Rice Puffins cereal for the crust & the filling used Pacific brand Almond Soy Milk. I gave the recipe to Paula, so that she could make it for him, & she can't find it. I've searched for weeks for it, so you're a last resort.
I hope you all are enjoying your new home...we miss you on Ronald St!

There's a usually a recipe right on the can of pumpkin :). Peg follows that and she uses Gluten Free Pantry Perfect Pie Crust Mix for the crust.

Instead of evaporated milk, coconut milk should work.

GF, dairy-free, corn-free Pumpkin Pie
 
Here's one I tried last year. It's called Fabulous Pumpkin Pie Recipe. The crust didn't work out too well, as I remember, so I'm looking for a recipe replacement for the crust that is GF, dairy-free, and corn-free. The filling, however, was quite yummy!

Changes I made to the recipe are that I used 100% pure birch sugar (xylitol) instead of the sweeteners the recipe called for, and I increased the amount 1/4 cup. Xylitol doesn't spike your blood sugar as much as regular sugar. Most xylitol is made from corn, but I found this one that's made from birch sap. It's very expensive, but you can use it just like regular sugar. It even looks like regular sugar. You just can't eat too much xylitol or it will give you diarrhea.
