What do nutrients really do?

While searching the web today I found this excellent site:

Dr. Ames is a very busy and successful biochemist. He developed the Ames Test which our FDA uses to screen new substances for carcinogenic potential.

Dr. Ames is very into how aging occurs. Sometimes faster in some people than others.
