My DH was sitting watching your video with me, and he wants to know how you made them.

Do you roll them in flour before you bake them? Do you just sprinkle a little lemon juice, or do you use a set quantity?

Inquisitive minds want to know! :D

Never thought of rolling them in flour before baking. I can't do that because I don't go near flour. I'm a diabetic. But that might add an interesting twist.

This is what I do. And I did this yesterday and I MADE A BIG BATCH.

I bought 3 packages of chicken thighs (with skin). Cost $1.49 a pound.

I soaked them in cold water for some time. Then I get a plastic shopping bag, open it up in the sink, and I take my poultry shears, holding the chicken thigh over the open plastic bag and I snip off ALL THE SKIN, AND FAT. This shears do this in no time flat. All the trimmed off stuff goes directly into the shopping bag. I did this with 18 small chicken thighs.

Tied up the bag, threw it in the garbage. I wouldn't clean chicken any other way. I's so easy and there's no mess.

Then I take all the cleaned up chicken thighs and put in a BIG bowl. Then I pour some lemon juice over them. I cut up some fresh parsley(you can use the ones in the little jars if you don't have fresh parsley).

You can add any seasoning you prefer at this point.

In a small food processer I put 7 cloves of garlic and turn it on and they are chopped in no time.

I then put all the chopped up garlic into the chicken. I splash on a bit of exra virgin olive oil.

I take my hands and mix up the whole stuff coating ALL THE THIGHS.

I then take two aluminum foil pans.

I arrange the thighs in the pans.About 9 thighs in each pan.

Now while I was doing this the oven was pre-heating at 425 degrees.

One hour. Midway I took my tongs and turned over the thighs.

BE VERY CAREFUL, THIS WILL BE A VERY HOT OVEN WHEN YOU OPEN IT UP TO TURN OVER THE THIGHS.

Oh my god, when one hour is up and you take out the thighs, they are browned, the smell of garlic will send you to heaven.

These were so good I had 7 of the thighs for dinner.

They are small but oh my god.

I think I'll make Breasts from now on. I can't eat 7 of those. lol

In a separate pan (my wok), I stir fried LEEKS and Broccoli florets.

Oh god, that was yummy. It was my first time making Leeks, I had never tried them before.

They were really good. Looks like big scallions, but sweeter.

I love chicken and could eat it most days of the week. We often get the drumsticks here very cheaply, so we might try those with your recipe.

I always take the skin and fat off all the chicken that we cook. I could not eat anything with that much fat attached. Yuk!

Alan and I just came home from Trunzo and we bought 3 packages of skinless thighs, and 3 packages of chicken breasts.

I'LL BE ROASTING AWAY!!!
