roasting turkey
My SIL & girls are coming at Thanksgiving and SIL wants to eat a little early so they can go eat a bit with her FIL (they are coming in from out of state). She suggested putting the turkey in the oven at 175* over night then stuff it (if I want) in the morning & change the temp to 325* & it won't take as long on that day. She said she has done this before & it worked. What do you have to say to help? Thanks

hmmm interesting never did it that way i always just get up real early and or do it before I go to bed then put that bad tom turkey in and cook, i will be intersted in hearing about others if they have done this seem to recall my nana saying something along these lines, i dont recall 100 percent

my DH uses the BBQ for the turkey. It enabled me to have the oven for the other fixings.
We use a roasting bag, directions are on the box. So, whatever the directions say.:) Depending on the size of the bird, it really does not take very long for us. Less time if you do not stuff. Thanksgiving, up in the top three of my favorite holidays. |
And the other two would be??? *grin

gee...
I would worry about getting sick... cooking a turkey the wrong way can be dangerous.
I am going to look this up on the net for you. and come back here if I find anything. I would put lots of salt in the cavity tho...salt kills germs. Most recipes suggest rubbing inside with salt. I'd use sea salt, for flavor etc. You might want to do the stuffing separately completely. i.e. don't stuff it at all. I'll be back. This is one site I found... with some suggestions: http://chowhound.chow.com/topics/335611 Some of the posters on that blog, suggest a high temp blast to start, to kill any germs. I also thought the brine suggestion was good. My son made a brined turkey for us one year and it was very very good. |

Well...all my life my Mom put the Turkey on late and then we went to bed. Nothing like torture while you sleep...smelling that bird cook all night. She would rub salt in the cavity. Something else she did that just made it great was to take a few cubes of butter...melt them. Mix flour with them to make a paste. Then you take that paste and cover the whole bird with it. Salt and pepper the top and cover it ant throw that baby in the oven. I cook it a little wamer. When you wake up you will have the most wonderful moist fall of the bones bird you have ever cooked. We never died...and I do put the stuffing in at bedtime too. This way you have your oven open to cook all the other goodies.

There is a recipe on how to do at Living on a dime.com. just go to their
blog. I just dont think you can stuff it but you could do the stuffing on the side. They say its the best turkey ever!!! Good luck!!! |
I think I might do it as in one of the sites Jo55 gave me (thankyou Jo :)). You cook it at 475* for 20 min, then turn it to 250* for about 5 hrs (for a 15# one) then let it sit for 20 min.
