Apple Cider Scalloped Potatoes
 
2 tablespoons flour
1 cup low fat milk
1 cup apple cider
1/2 cup chicken broth
1/2 tsp salt
1/2 tsp pepper
1/8 tsp nutmet
1/2 cup smoked gouda cheese/shredded
1/2 cup jarlsberg cheese/shredded
2 lbs Yukon Gold potatoes/thinly sliced

preheat oven to 425. Place the flour in a medium sauce pan. Gradually add milk, stirring with a whisk until well blended. Stir in cider, broth, salt, pepper, and nutmeg, bring to a boil, stirring constantly. Remove from heat. Combine cheeses in a small bowl. Arrange half the potatoes in a shallow 3 qt casserole and sprinkle with 1/2 cup cheese mixture. Arrange remaining potatoes on top. Pour the cider mixture over the potatoes and cook for 25 minutes. Remove from oven, press the potatoes with spatula. Sprinkle with remaining cheese mix and bake another 20 minutes. Let stand 10 minutes.

Serves 8-10 people.

It is also very good if you add a Walla Walla Sweet onion thinly sliced between layers of potatoes and cheese!

I plan to try this recipe tomorrow. A friend gave me a pork loin and I need to cook it (don't like to freeze it....seems to taste funny after it thaws out). This sounds like it would go well with pork.

We're not crazy about nutmeg so I'll probably leave that out....but the onion sounds really good so I'll slice one up and put in the middle. I don't have any Jarlsberg cheese....you think regular Swiss would be okay?

I'll have to remember to 1/2 the recipe, though. Wish me luck!

You don't really taste the nutmeg...use allspice instead. I would use cheddar cheese or colby if you have that. Or even mozzarella. Swiss might be too strong.

I wouldn't cut the recipe in half...you will love it and it reheats very well!!

I tried this recipe yesterday and it was really good. I served it with a pork loin, fresh green beans and some sour dough rolls left over from Thanksgiving.

I ended up using white cheddar mixed with some mozarella and it was soooo good. I used an onion in it, too. About ten minutes before it was finished cooking I sprinkled some freshly grated parmesan on it and let it brown. Yum!! I'll be making this one again! :)
