Need a recipe.
 
Hi all,
I hope you are all having a great night. I can't go to bed until I get a movie taped for the boys and I to watch together. They love for me to watch movies with them but I sure can't handle the blood and gore ones.

Anyway, I am looking for a recipe for Pumkin roll. That is the long roll with the cream in the middle. I had it at one time but needless to say I can't keep up with anything these days.

I want to make some for Christmas for some friends.

Do any of you by any chance have this recipe.

Sorry dear I don't have the recipe but moreso I'm just making sure I'm on that friends list!! :D :D :D Yummmmm Yumm!!!! I do luv em!!! Boy I sure do wish my Mom was here!! I bet God is on his best behaviour knowing my Mom is gonna be baking him some of the best he's eating come the holidays. :p It's gonna be a tough one. But like alot of you who have had to let some of your loved ones go already, I'll get through it. Chin Up!!!

Roll Ingredients:

3 eggs
2/3 cup cooked pumpkin
1 teaspoon lemon juice
3/4 cup flour
2 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon salt
some finely choopped nuts, optional

Filling ingredients:

1 1/2 cups confectioners sugar
6 oz. cream cheese, softened
1/4 cup margarine, softened
1/2 teaspoon vanilla

For Roll: BEAT eggs on high speed of mixer for 5 minutes
ADD sugar, pumpkin, lemon juice gradually while beating constantly
COMBINE remaining dry ingredients
STIR dry ingredient mixture into pumpkin mixture thoroughly
SPREAD over 10 X !6 jelly roll pan that has been sprayed with Pam
SPRINKLE with some finely chopped nuts, if desired
BAKE at 375 degrees Farenheit for 15 minutes
COOL slightly
CUT edges with sharp knife to help remove from pan more easily
TURN out unto clean towel
SPRINKLE with confectioners sugar
ROLL up in towel and cool completely

For filling: BEAT all ingredients together until creamy

To finish: UNROLL cake
SPREAD with filling
REROLL
SPRINKLE with confectioners sugar

Can be frozen if well wrapped
Must be cooled completely or it will get soggy

Thanks for the recipe Liz and Jo.
I am very excited to have it. I have never made them before but I have had them made for me several times. This year I'm going to get Susan to help me with them. Last year I made 15 loaves of banana bread, this year I'm going to make these rolls.

Mark, If you ever want to PM your email to me I will send you one for Christmas. You would love it.

My Mom wasn't the greatest cook but she baked the best cakes you ever ate. She use to make a blackberry cake that would melt in your mouth. She baked cakes every time someone lost a family member and took it to them. She baked for birthdays and Christmas's. There were 10 of us kids but we never wanted for anything when it came to food. I will say though there was some things she couldn't cook but most things she could. So I guess she was a good cook after all.

She use to bake 3 layer cakes and they were perfect. When I try to make one they fall. LOL The crumbs are tasty though.


My Mom has been gone 12 years but I still miss her so I know what you are going through. It gets easier in some ways but in most ways it don't. She and I were best friends.

Anyway, thanks again for this recipe. I'm excited to have it.
