Easy Spinach Quiche
 
I made this super easy Spinach Quiche recipe yesterday and not only was it easy, but it tasted really good.

Ingredients:

1/2 cup Olive Oil
3/4 cup Self Raising Flour
5 eggs, beaten
1 carrot, grated
2 Spring Onions, chopped
1 cup grated cheese
2 cups chopped spinach
Pepper & Salt


Mix all ingredients together and bake at 350F for 40 minutes.

Serves 6.


One of the good things about this recipe is you don't have to make a pie crust. The self raising flour sinks to the bottom and makes the crust for you.

Don't forget if you don't like spinach you could probably substitute another vegetable in it's place....or leave it out completely.

One of our microwave books had a recipe for a crust less quiche.
It was pretty good too.. if I recall-- just going from memory, I haven't made it for awhile.

I used a glass/Pyrex pie dish {round- more even cooking}
- buttered or lightly oiled

5 to 7 eggs mixed well with a bit of milk or cream - approx 1/4 cup if I recall?? maybe use less and see how milky it looks {too much milk and it won't set up well}
1 cup or more of grated cheese - we used cheddar
salt & pepper as desired

we liked it with canned asparagus spears laid out in the bottom of the dish
sometimes we also microwaved chopped onions and added that into the egg mix.

Then pour it over the asparagus or whatever vegetable used.

other veggie choices-
partially precooked zucchini - leave it in thick slices or chunks so it doesn't fall apart.
partially precooked broccoli is good too

now the microwaving time - I can't really remember that part
But usually I set it on high and kept an eye on it till it started puffing up and then changed the power level to medium until it looked nearly set in the center.
It will finish setting up as it sits awhile.
Then slice and serve.

If you have ever microwaved scrambled eggs - you'll know that they will puff up quite a lot and then deflate after the power stops.
It takes a little practice to know when to stop the eggs from cooking so that they don't over cook, but it's not too hard.
It's better to under cook a bit and then finish in short increments - otherwise the eggs get rubbery:).

I also do a microwave frittata.

similar to this - Quick Microwave Frittata Casserole

[ * 2 cups frozen hash brown potatoes
* 1/2 cup shredded carrot
* 1/4 cup chopped onion
* 2 tablespoons chopped fresh parsley
* 2 tablespoons butter
* 1 to taste salt and pepper to taste
* 8 eggs
* 1/2 cup milk
* 1/4 teaspoon dry mustard
* 1 dash hot pepper sauce
* 1 cup cubed cooked ham
* 1/2 cup shredded Cheddar cheese

DIRECTIONS

1. In a non-metallic 2 quart casserole dish, stir together potatoes, carrot, onion, parsley and butter. Cover and microwave on High for 5 minutes, stirring once or twice. Season with salt and pepper.
2. In a medium bowl, beat together, eggs, milk, mustard and hot pepper sauce. Stir in cubed ham. Pour egg mixture into casserole, stir to combine.
3. Cover dish and microwave on high for 3 minutes. Draw cooked egg toward middle of dish and microwave on medium for 10 to 12 minutes. If you do not have a turntable rotate dish 2 to 3 times. Sprinkle cheese on top, cover and microwave for 30 to 60 seconds until cheese is melted. Let stand 5 minutes before serving.

I like to add zucchini chunks into the mix and top with tomato slices.
You can use your own fresh potatoes instead of store bought hash browns, the precooking step takes longer though.

Oh Yum Jo, you've got me with those recipes.

I particularly like that frittata one and will give it a try in a day or so.

I'm picking zuccinis and spinach out of the garden now and need recipes to eat on the day, and also recipes that I can freeze.

I must admit that spinach quiche one I cooked yesterday looks like it would freeze well.
