Hi everybody! I hope you all had a good holiday. Mine was wonderful.

There was the Christmas Eve catastrophe when I could not find a store open to buy the pepperoni I needed for my lasagna. Fortunately I was able to bribe my mom's neighbor who owns an Italian restaurant that happened to be open. $20 for pepperoni..... :mad: But I did make some awesome lasagna which I enjoyed with my family and my best friend and her husband.

I also became addicted to a new game that I bought for my future stepchild.... Roller Coaster Tycoon 3! I also had her a computer built and we got to spend the week with her and a great time was had all around.

Oh, and I did go and finally get our Christmas gifts to each other last night... New cell phones! It's the only thing we bought for each other this year but we went all out for the kids and I could not be happier.

We've had my son's in-laws with us for a week, and now they have left. So DH and I are starting to "dung!" Do you know that word? The in-laws didn't know what we were talking about.

We explained that now all of our boys are out of the house, we are going to start throwing away stuff that should have been thrown away years ago! We call that "dunging!"

Just wondering if that is just a cultural word for us eastern Idahoans!

I'm feeling great de-cluttering. A great way to spend the week off with my DH. OF course, he wants to go on a little trip. I guess we'll see who wins that one!

My only plans this week besides working for 3 days... I need to steal the truck from my fiance so I can come down here and pick up the GIANT 36" monitor I just bought. It's bigger than my TV and since we only watch movies on the laptops, I figured we would put it in place of the tv and hook up the computer surround sound. It will be just fine!

Oh and I am cooking a big dinner and inviting everyone over for board games for new years!:wink:

New Years eve doesn't mean much to me. But Thursday my daughter and grandkids come in as do my sisters daugther, Friday my Brother gets here with his wife and two sons. We don't get to see them every year. Saturday the other brother and sister in law come. His son just got married this year and are expecting their first child in May.They will get here about the same time as his parents. So hopefully we will have Christmas dinner almost done when they get here. After dinner all the men clean up and the married women go do their stocking stuffing then the fun begins. In the evening we will have a baby shower for the new baby! Sunday I willl collapse! No wait, my brothers are still here then. My daughter leaves Saturday night:( OK, Monday is collapse day. No, thats mother in law day. She might have to wait for us to take her out for supper that day!

I decided it was okay to splurge
 
Normally I'm a hamburger kinda gal...But the County (that I work for) gave us a <$25 gift certificate to use on a turkey, ham or roast. Well, I've had enough turkey and ham lately, so I bought my first ever Prime Rib Roast!!! It was huge and the $25 didn't even pay for half of it.

And then I saw the crab legs. I've never cooked crab legs. I don't even know how to crack them (so I never order them at a restaurant). I bought some and my son steamed them. Yum!

(Hey, MelodyL: why don't you do a video showing us how to crack crab legs?) :cool:

Plus, he brought some shrimp and make shrimp scampi. I finally decided I was just in the way, so I went and sat down at the table and just waited. There were about a dozen of us that ate and ate until we couldn't stuff anymore in.

Then we got out the robes and doll and had the grandkids act out the Nativity Scene while Grandpa (DH) read from Luke 2.

And then we gave out the gifts, which was framed family pictures that we had taken during Thanksgiving. Did you know that frames cost nearly as much as pictures??? :confused:

Whew! No wonder I'm tired! And broke. :rolleyes:

Hey Twinkles,
I was shopping on Christmas Eve, (last minute stuff!) and they had prime rib for just $2.98 a pound! People were hauling out huge ones for cheap. So I went back and got 2 that were around 10 pounds. That cost me about $50, but it will be great later!

Now, how do I cook it?????

Cooking A Delicious Prime Rib Roast. A Recipe For Success.

While you are shopping, pick up a good digital instant-read meat thermometer if you don’t already have one. It's the only sure way to tell when you're roast has achieved a desirable cooked temperature

It is crucial that you allow the roast to come to room temperature to ensure even-cooking. This means leaving it out for up to two full hours right before roasting.

* Preheat your oven to 450 degrees.

* Use a paper towel to pat the roast dry.

* Rub butter on the cut ends of the roast.

* Create a seasoning rub or paste with ingredients such as pepper, coarse salt, garlic powder, and onion powder. Make a series of ½ inch deep slits all over the top of the roast as well as the sides. Rub your seasonings all over the roast, covering all exposed meat.

* Place the roast in a heavy metal roasting pan, bone-side down.

No matter what size roast you have, you will start it in a pre-heated 450 degree oven for 15 minutes then reduce the temperature to 325 degrees for the balance of cooking time. Cooking times will vary depending on size of the roast and desired level of doneness. The following chart gives approximate times for to reach "rare" at various sizes.

Cooking Time for Rare (120°)

(3) Ribs, 7 to 8 lbs. 15 minutes at 450°, Then 1 ¼ to 1 ½ hours at 325°
(4) Ribs, 9 to 10 lbs. 15 minutes at 450°, Then 1 ½ to 2 hours at 325°
(5) Ribs, 11 to 13 lbs. 15 minutes at 450°, Then 2 to 2 ½ hours at 325°
(6) Ribs, 14 to 16 lbs. 15 minutes at 450° Then, 2 ¾ to 3 hours at 325°
(7) Ribs, 16 to 18 lbs. 15 minutes at 450° Then, 3 to 3 ¾ hours at 325°

Every half hour or so, baste the ends of the roast with the drippings. Use your meat thermometer about a half hour before the expected end of the roasting time. Make sure to insert it in the thickest part of the meat, not touching the fat or bone. When the internal temperature reaches 120°, pull it out of the oven and cover with foil. Let the roast sit for twenty to thirty minutes. It will continue to cook during this time, reaching a temperature of about 125° to 130°. This resting period allows the juices and flavors to permeate the roast.

Rare meats measure in at 120° to 125° with a bright red center that grows slightly pinkish towards the exterior. Medium rare meats measure between 130° to 135° and are characterized by their extremely pink center portion that grows brown towards the exterior. Medium meats have a light pink center, brown outer portions and readings of about 140° to 145°. Medium well is not pink at all and is achieved at 150° to 155°. Well done is reached at 160° and above and is characterized by a uniform brown color.

Use a long, sharp knife to carve your roast. Serve with Yorkshire Pudding, Au Jus and Horseradish Sauce. Au Jus is French for “with juice”. Place the drippings in small containers for dipping.
