Hi Lil,
Gingerbread! One of my favourite things in the whole world - any chance of the recipe? (For when I eventually get round to replacing my stove...) and oh wow, copper kettles, I was suddenly, magically transported to a slower, gentler world. Any one else got those kinds of memories? all the best |

Hi Lisa,
All syrup in the UK is "treacle", though mainly applied to cooking syrups. Both black treacle and golden syrup which is often just called treacle are, I think, peculiarly British, made by Tate and Lyle who've been making it for several hundred years! So black treacle is like dark molasses, but smokier, with a liquorish-like edge to it, very thick, very sweet, very yummy. So...thick, very dark brown, sweet gunk.... It's the main ingredient (apart from ginger) in gingerbread recipes in the UK - I will substitute, in her recipe, black treacle for the molasses. Now yer know! We live and learn..all the best |

Hello Brokenwings: The old fashioned apple butter takes 10 gallons of cider!
Here is a more modern, more manageable version. I hope you like it. APPLE BUTTER 4 Quarts of apples, cored, but not peeled 1 Quart of sweet apple cider 2 Cups granulated sugar 2 teaspoons ground cinnamon 2 teaspoons ground cloves COOK: unpeeled apples with the cider in saucepan until very tender PUT: through food mill COMBINE: apple mixture with sugar, cinnamon and cloves in slow cooker (you can adjust spices and sugar to your taste) COOK: on High in slow cooker for 10 hours or till of desired consistency, stirring occasionally SPOON: into hot, sterile jars leaving a 1/2 inch head space SEAL: with two piece lids (the kind with the ring and flat piece with rubber on the bottom makes about 3 pints |
