Default My Nose....

Banana Nut Bread

1 3/4 cups sifted all purpose flour
2 tsp. baking powder
1/4 tsp baking soda
1/2 tsp. salt
1/3 cup soft shortening (I use Crisco)
2/3 cup granulated sugar
2 eggs, unbeaten
1 cup mashed ripe banana (2 or 3)
3/4 cup chopped walnuts

Preheat oven to 350. Grease loaf pan. Sift flour, baking powder, soda, salt and set aside.

With electric mixer, thoroughly mix shortening with sugar, then with eggs until
very light and fluffy - about 4 min. altogether. Then, at low speed beat in flour mixture alternately with bananas just until smooth. Stir in nuts.

Turn into loaf pan and bake 1 hr. Cool in pan 10 min; remove. Cool overnite before slicing.

MY NOSE indeed!

My BANANA BREAD recipe: (MAKES 2 LOAVES or one BUNDT cake)
1 1/2 c sugar
3 eggs
3/4 c oil
2 c flour
2 tsps baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp allspice

2 cups mashed bananas
1/2 cup raisins (or chopped nuts)


350 degrees, grease + flour a bundt pan or two loaf pans.

Beat sugar, eggs, until creamy. Mix in oil.
Sift folur, soda, salt, cinnammon, allspice - add all this to the creamed mixture.
Mix in Bananas and raisins (nuts).
Bake 1 hour until done.


I think its the spices that make mine different. ( Its a cookbook recipe - not my own, so I guess I should give the name: "The Best of Bridge" cookbook Series- Winners P.24)

HINT: I keep older bananas in the freezer, in their skins - and they stay there until I want to make banana bread - sometimes for months, then I thaw them out - they look pretty gross - but they add a delious SAFE taste to this moist bread.

lol..addy...i have about 10 in my freezer right now. hubby says they look so gross. but boy do they make for tastey bread and muffins...pancakes...
easy to use too.

i use cinnamon and allspice too. if i'm in a hurry...i use the recipe on the bisquick box for banana bread. it tastes better if you make it, wrap it in platic wrap and eat the next day. hard to wait...but worth it. oh...and chocolate chips mixed in too...yum.



it was her nose smelling the baking bread.

The banana bread sounds good. I will have to try both!! Has anyone every taken bananas - peeled and then frozen them in plastic wrap - my kids use to like those for after school snacks and other times - mom did too!
