I'm 61 years old, and it never occurred to me that muffins don't freeze solid, hard as a rock. Duh. We bought some pina colada muffins which my husband didn't particularly like, so I stuck most of them in the freezer. I took one out a couple of days later and was so hungry I took a bite while it was still "frozen". Well, it was cold, but not really frozen, and it was soooooo good.
So we've been buying muffins from the reduced baked goods shelf, peeling off the paper, cutting them in two, and freezing them individually in saran wrap and then in a ziplock bag. On a warm day, a cold half muffin is just right, especially the fruit kind. Orange-cranberry, mmmm.

Sounds yummy! I've found that I can freeze most anything and it thaws out well. I've done the same with bran muffins.
