There's this bar I like to go to called JJ's Grill, which has good cheap drink specials and really good food! I've been wanting to go hang out there for several weeks and haven't been able to, so tonight I thought I'd try to recreate one of my favorite dishes from there, baked nachos.
I layered seasoned black beans, mexicorn, sliced jalapeños, chopped onions, spices, chopped black olives, picante sauce, and a whole bag of mexican cheese blend, and baked it until it was nice and bubbly. Not quite the same as JJ's, but pretty darn good! I'm so proud of myself, because I really don't cook at all anymore.

Oh it was yummy! It won't bother me tonight, but tomorrow I'll be singing "Ring of Fire".

I figured if I couldn't go out, I would just do my thang here. I was brave enough to go to the nearby liquor store and get beer and tequila, so I had the appropriate beverages to go with my mexican food. Margaritas are delish!
