as for Jarlsberg and Gouda, lol, forget it!

Velveeta and Happy Cow are widely available, but good cheeses... HAH!

(that's why we're making our own cheese, and maybe in a few years, we'll get GOOD at it!)

cheddar and mozzarella make good substitutes. Use apple juice.
