For the eggplant part - I would suggest eggplant parmasean. They fry up the eggplant, cover it with cheese and sauce. It's actually a tasty italian dish.

Leggz, you are always good for a laugh!

My family's favorite way to eat sweet potatos:

Peel and dice into crockpot, several sweet potatos
Add 1-2 cans of pineapple chunks with juice
Top with some butter and brown sugar
Cook on low all day

It's the best.
