At risk of getting fired....... what about watermelon? Hot and humid summertime down here. of course, you have to save room for something from the ice cream man (creamsicle? )

Alright already - I was just trying to be good- LOL
And I love Lemon meringue pie and Rhubarb pies and cakes mmmmm.

My mom did a delish cake - something like this recipe-

RHUBARB CAKE

5 c. rhubarb, cut up
1 (3 oz.) pkg. strawberry gelatin (dry)
1 c. sugar
3 c. miniature marshmallows
1 pkg. yellow or white cake mix

Layer rhubarb, marshmallows, gelatin and sugar. Prepare cake mix according to directions on package. Spoon over rhubarb layer. Bake at 350 degrees until cake tests done, about 1 hour. Let cake set in pan before serving. Serve plain or with whipped cream or ice cream.

or RHUBARB UPSIDE-DOWN CAKE

1 pkg. yellow cake mix
5 c. diced rhubarb
1 (3 oz.) pkg. strawberry Jello
1 c. sugar

Grease 13"x9" pan and place rhubarb, dry Jello, sugar and marshmallows evenly over bottom of pan. Prepare cake mix according to directions. Pour prepared cake mix over ingredients in pan. Bake at 350 degrees for 59 to 60 minutes. Invert onto serving tray first before serving. Top with whipped topping.

... on why PIE is better than CANDY:

It can be served warm and still be delicious
It can have fruit OR chocolate OR cheese
It's better for you
It can have ice cream on it (or in it)
