I came across this video about why we should stop eating processed vegetable and seed oils:

They easily oxidize after being pressed which makes them unstable and toxic. High heat from cooking and deep fryers causes further oxidation. All that oxidation is destructive to our cells and causes inflammation and premature aging which is bad for our brain. But the good news is that we can easily improve our diets and health simply by replacing the toxic Vegetable and Seed Oils with healthy Saturated Fats. Avoid cooking with or consuming these fats and oils: Canola Corn Cottonseed Grapeseed Hydrogenated Oils Margarine Partially Hydrogenated Oils Peanut Oil Rapeseed Rice Bran Safflower Soybean Sunflower Trans fats Vegetable Oil Vegetable Shortening Wheat Germ Oil
