I once had a recipe for veggie soup that was totally free to be enjoyed and at any amount. Probably about 12 13 years ago. Consisted of tomatoes, carrots, cabbage, chicken broth, etc. After cooking, it was blended into a great hot drink. Sure would love to make it again. Please please somebody remember!

2 garlic cloves, minced 1 tablespoon tomato paste 2 cups chopped cabbage 1/2 yellow onion 1/2 cup chopped carrots 1/2 cup green beans 1/2 cup chopped zucchini 1/2 teaspoon basil 1/2 teaspoon oregano salt & pepper

be sure to keep your protien up if you plan on doing this for a few days. either add some chicken...or beans. but with all that cabbage...i'd suggest the chicken.
![]() it is yummy. like to add canned diced tomatoes and lots of celery. any left over veggies work too. never tried it blended. sounds creamy. yum!

Hi,
I leave out the cabbage and simplify: -store bought boxed/canned veggie or chicken broth (lowish salt if you can find it) -a Table spoon or two of tomato paste -carrots -onions -green beans -zuchini Then I sprinkle Parmesan cheese on top to serve. Back in the old days, I used to measure 2/3 cup cottage cheese (or whatever number of points I wanted) into a bowl and pour the soup over it to get protein. Ohhh! I never tried it as a hot drink. That is a good idea, Froglady ![]() M. |
