Someone after my own heart! This is a quote from one of the posts about the kelp noodles on the lowcarb forum.

I'm interested in trying these. Wonder what the sodium alginate content is. Have been trying to get my hands on food grade or USP sodium alginate, which is used in Japan for "gentle detox", helping to bind heavy metals out of the body.

My local whole foods doesn't have the kelp noodles, they have sea vegetables by that company, but not the noodles. Hnmmm.... well, I'll have to try some other stores. I did get some sirataki noodles (yam flour).

Well, I sure don't have kelp noodles available locally, but I've got some dried kelp I bought at a chinese store in Memphis. I may try soaking the kelp, blending it to a slurry, and add it to an rice noodles recipe in place of some of the liquid to make my own noodles. The noodles wouldn't be only kelp, but I bet they would have a good taste. If my experiment turns out, I'll post the recipe.
