chicken pesto recipe

1½ lbs chicken thighs or chicken breasts
4 oz. red pesto or green pesto
1½ cups heavy whipping cream
½ cup pitted olives, black
½ lb feta cheese, diced
1 garlic clove, finely chopped
I am going to add mushrooms!
salt and pepper
butter, for frying
Instructions

Preheat the oven to 400°F (200°C).
Cut the chicken thighs or filets into pieces. Season with salt and pepper and fry in butter until golden brown.
Mix pesto and heavy cream in a bowl.
Place the fried chicken pieces in a baking dish together with olives, feta cheese and garlicand mushrooms. Add the pesto mix.
Bake in oven for 20-30 minutes, until the dish has turned a nice color.

I eat at sandras health food store/cafe for lunch monday thru friday. That is my big meal of the day.
Dinner we simply saute foods in coconut oil, steam frozen veggies ready in 5-10 minutes. no other sides meat and veggies is all, so a lighter dinner.
Occasionally I will put a pork roast in the crock pot.
so To actually use a recipe and cook something in the oven is rare!

I changed the recipe a bit.
12 oz chicken breast cut up sauteed in 2 T coconut oil
6 oz green pesto mezzetti
2 cups heavy whipping cream
4 oz of sliced black olives
6 oz of meditaranian feta cheese crumbles
1 teaspoon minced garlic
12 oz of brocolli cole slaw with carrots and cabbage too.
salt and pepper

after sauteeing the chicken in coconut oil add the brocolli and wilt them about 3 minutes.
mix the pesto and cream in a bowl add the garlic.
place the chicken in a baking dish together with the olives, feta. add the pesto mix and bake for 30 minutes at 400degrees.

it was delicious!

i am confused. I thought the diet was to limit dairy products

I am following a low carbohydrate diet.
The cream is mostly fat so hardly any carbs.
one ounce of cheese has 1 carb
There are 12 carbs in a regular cup of milk.
so yes milk adds up fast.
2 tablespoons of sour cream has 1 carb
1/2 cup of cottage cheese has 4 carbs.
I am not eating any friut right now but strawberries are a good choice.
my wine has 4 carbs for a 5oz glass.
I am eating mostly green veggies.
I am roughly having 60 carbs a day.
They say you can have up to 100 carbs a day and still lose weight but more slowly.
atkins diet has you only eating 15 carbs for like 2 weeks.
They suggest eating alot of cream cheese and macadamia nuts which have almost no carbs and meat, eggs.
The idea is to get you into ketosis, fat burning mode.

I just found out that 1 cup of heavy whipping cream fluid has 7 grams of carbs...so more than I thought.:o
I wonder what the recipe would be like if I used coconut milk instead?
I bet it would be good!

I HAVE JUST BEEN DOING RESEARCH ON BINGE EATING AND THE RESEARCH IS DISMAL. i GOT ON THE SCALE A HALF AN HOUR AGO AND WEIGHED SIX POUNDS THAN I DID ON MONDAY.i seem to be crashing on all levels. I wonder if i can have heavy cream with coffee instead of that creamer.exxcept for that i don't eat carbsii am staying up to watch the tennis match at three. crazy but federer doesn't have many good years left/.Federer has a new season ahead and he just said in Australia that, "I took these six months off so I would be playing for hopefully another two to three years, not just another six months or so.".
