mari,

if they get over ripe...mash them up and freeze them. great to add to fruit smoothies or milk shakes.( you can also just put them in the freeze in the peel. just scoop out the fruit after thawed. but don't let people look in your freezeer,,,you will get funny looks )

i make banana bread all the time. ( heheh..don't laugh ) i just thaw out for little bit. perfect. also yummy to add to pancake batter.

No wonders I feel funny after I eat bananas. Well, chalk that food up to the ever growing list of things I can't or don't eat. Unfortunately that is a big list.
