Default Cashew Gravy

Sure Myst, I can post it. I know I started with a recipe, but its been changed so many times, I now consider it "mine".

Cashew Gravy

1 small onion, chopped
1 clove garlic, chopped
2 tablespoons oil
3 tablespoons brown rice flour (or flour mix or arrowroot or cornstarch)
1 cup vegetable broth
1 1/2 cups water
1/2 cup cashews
salt and pepper to taste

Saute onion and garlic in oil until lightly browned. It will seem like "too much" oil but its needed later for the flour/thickening.

In the meantime combine cashews, water and veg broth in blender and blend.

Sprinkle "flour-of-your-choice" over cooked onion and oil. When flour begins to brown, add cashew liquid from blender. Stir/whisk in until heated through.

Thanks, Jamie. That sounds really good! Ooh! I have homemade veggie broth in the freezer (it turned out really good - first time I've made it), just have to get some cashews and I'm set!

Hi All,

I'm still hanging around, mostly lurking sporadically. I've been preoccupied with other projects.

I've been staying gluten free, but recently found out that dairy is not agreeing with me again. I'm bummed about it because I miss my kefir. Coconut milk kefir does not cut it with me. My acupuncturist says I'm ok to have gluten, but my chiropractor disagrees. I'm staying off it. I do occassionally eat corn, soy, and nuts. I'm eating peanuts more now with no obvious reactions. So, the two biggies are still out, but I've been able to add back in other foods I haven't been able to eat in moderation . I can also eat out more often, whereas before, I'd get sick almost everytime I ate out.
