Well, perhaps one day you will quit testing the theory . Total elimination is the only way to really get the maximum results. I'm pretty convinced that gluten and dairy aren't good for anyone... and all the more reason for anyone with any chronic illness. Have to admit, though, while I've been strictly gluten free for about nine years, I've taken the test and retest approach with dairy. Having removed major sources for a long time, I'd still dabble with an occasional cheese or milk chocolate cheat... and find myself with a week of joint pain. I could live with those symptoms on occasion, I suppose... if I didn't know that the immune system damage may be going beyond that.

But, many people trial and error for a period of time before convincing themselves not to succumb to the cheats.
