There are spikes even with no diabetes and the nerves need level glucose. My glucose is always fine. But my doctor has me on sugar free, gluten free and no simple carbs for healing the nerves. People that have normal glucose numbers do not realize they too need to be careful.
There is no test for gluten sensitivity so it is great to stop and see how you do. No need to eat it so it is easy to stop. My PN is healing as well as my autonomic neuropathy/dysautonomia. Diet, even with no sugar problems is key. The other half is supplements. Flying Squirrel, if you don't eat meat, you need to be really careful with a lot of things you do not get in the diet that we need. I didn't eat red meat for years and boy did I pay. I will never do that again. Even as careful as I was. Really bad.

Thanks Sally--I can't eat meat. It stems from a visit to a family friend's small farm when I was young. I didn't see my favorite cow in the pasture and later found out I was eating it for dinner. Very traumatizing. To this day, any kind of beef, chicken or pork makes gag. It literally will not go down. Neurotic, I know, but I can't get over it. I've tried! I love fish and seafood, but it would be expensive to have that a couple of times a day. I get plenty of vitamins and protein through dairy, legumes, fish, fruits and veggies. And lots of supplements!
