At the co-op where I worked as a supplement buyer for 19 years they have a dried lentil soup mix. I make it up and add some cayenne and a glob of a OG mayo and then raw pumpkin seeds. It's fantastic and it's a rare day I'm not eating some. I'm pretty sure that lentils are a good bean for folk with neuropathy from diabetes. |

They pack great protein for me, I like them as soup, though actually prefer them al denté with onions and some carrots with an indian spice profile for some added glucose control.
I could probably Bubba Gump to lentils the way he does shrimp. Red Lentils, Green Lentils, Lentil soup...
