I'm making a new recipe tonight. Parmesan Crusted Tilapia. YUM!!!

It's so easy to do.....Publix had tilapia filets on sale so I got a couple of pounds yesterday. I usually fry it but just didn't feel like all the mess (and grease). This recipe is baked in a 425 degree oven. I usually get this dish when I go to Olive Garden and theirs is good but really rich. Mine won't have the Alfredo sauce with it. I also made some yellow rice and mixed broccoli & cauliflower to go with it. I am SO hungry I could eat right now!

Barb, I love chicken Divan. Maybe I'll get brave and fix that next week!

UPDATE:

took a nice ride to visit some friends that I haven't seen for a long time ... and I got one of the coldest shoulders of 'friendship' that I've ever experienced ... it was a one-sided conversation with simple 'yes' and 'no' responses ... I felt that I was interrupting their day, so after 5 minutes of standing - I left ...

now I KNOW that I'm moving ... at this point, I don't know where yet - but away from here!!

I'm okay - having a pizza, chips, dip and RootBeer ...

Vonn, sorry your "friends" were so unfriendly! Maybe they were having a fight or something.

The tilapia is really very easy. I use fresh filets. Pour some EVOO on a plate and coat each side of the filet in oil. In a large storage bag I put some plain breadcrumbs, 1 small packet of dry Italian salad dressing mix and several shakes of grated parmesan cheese. Shake it all up till it's mixed then take your filets one at a time and shake them until coated. Lay them in a glass baking dish (I lightly drizzle EVOO in the bottom of the dish, too). Sprinkle with salt and pepper. Bake in 425 oven for 20-25 minutes or until fish flakes easily. Really yummy!

Hi everybody!

I just finished mowing the lawn for the last time this year. Oldest DS taught me how to use the riding mower, he got it started for me though. Then I finished the trim with the push mower, that part took 45 minutes and I got some exercise too.

I went to our town fall festival for about an hour this afternoon but it was only about 40 degrees here. I had a sandwich and visited a few of the booths. I saw an acquaintance who's a member of the town council and he told me there are a couple of accounting jobs opening up. He told me to contact the mayor and he'd put in a good word for me.

One of them is billing for the water department, the other is town treasurer (which I would prefer).

I got home and emailed the mayor so we'll see if anything comes from it. Also, there's an accounts payable open at our local community college. I emailed about that last night. I applied recently to their IT department so they have a recent resume on file.

I got a letter from the university yesterday and I scored 94/100 on the test for the budget analyst job, and that might put me in the top three, but we'll see. I'd like to work at any of those places and hopefully I'll have a job soon. A government job is probably much more stable than working for a business nowadays anyway.

So it's been a busy day today and hopefully, productive.
