Pistachio Salad (aka Watergate Salad aka "The Green Stuff")

1 (20 ounce) can crushed pineapple, drained
1 (3 ounce) package instant pistachio pudding mix
1 (8 ounce) container cool whip, thawed
2 cups miniature marshmallows
1/4 cup chopped pecans or walnuts (optional)

Mix dry pudding mix in a bowl with everything else, put in fridge and you're done. Prep time is ~5 minutes, can chill for ~30minutes.

Serves: 8-10

You could make 2-3 batches of it for around $10.00.

I just LOVE this salad. I make it every year at Thanksgiving. My boys won't try it because it's GREEN  and I don't say a word. . . . just means more left over for ME!!! :D

Well, my meal is over.

I served Oven-baked Meatballs, Fruit and Yogurt Pasta Salad (I substituted frozen berries for canned fruit), Garlic Bread, Doritos and Cookie Salad Dessert.

Only about half of the 20 HS kids were there, so I brought quite a bit home. But, I'd rather have too much than not enough.

Thanks, all, for your suggestions.

Did they enjoy the food Faith? I saw the cookie salad recipe and considered trying it. Did it turn out well?

I don't have a clue.

We dropped the food off, and didn't stay. And, DS is not one who tends to share much information.

He brought a little less than half of the food home, and I made enough for 20 or more. I made 3-4x the Cookie Salad recipe. So, they must have liked it OK.

DH and I liked it; I kept out 2 servings for us. (And, now we have leftovers.)
