Sour Cream Chicken Enchilada Casserole
3-4 cups cooked, shredded chicken (about 4 breasts)
3-4 cups grated cheese (I like Mexican or Colby Jack)
1 cup sour cream
1 tsp garlic salt
1 can cream of chicken soup
1 med. onion (chop)
1 can of Rotel tomatoes (drain most of the liquid)
1 pack of taco shells (broken up)

Mix all (but only half the cheese) in a bowl making sure the shells are all wet. Place in greased 9 x 13 casserole dish. Top with the other half cheese. Bake at 350 for 20-30 minutes, watch for the cheese to turn brown. Serves 6

You know, I could do a low fat version of this.

Using chicken, low fat sour cream, low sodium chicken soup, low fat shredded cheese, (leaving out the taco shells, (if they have carbs I mean, I can always check on this).

But the rest sounds really good.

Can't do it in the heat (I don't have air conditioning), but boy, in the fall, I most certainly will try this.

Thanks much.

(And my arteries thank you too!!!! lol)

1. What's your favorite lunch meat?

mesquite turkey

2. What's your favorite chicken dish?

I like to brown chicken breasts in a skillet and pour BBQ sauce on them.
Chicken borscht (soup) is another favorite.

3. What's your favorite ground beef dish?

My mom's cabbage rolls.

4. What's your favorite veggie side dish?

? I'm not a lettuce salad person, so it would probably be something cooked -- mashed potatoes, corn on the cob, italian green beans ( green beans with bacon and onions and italian dressing)

5. What's your favorite snack food?

How can I choose just one? Something sweet (brownies, ice cream, Kit Kat, M&M's) or something salty (oil popped popcorn, potato chips, doritos, etc.)
