I wonder that I made shrimp scampi for the first time in my life and it was so easy ( a friend gave me a recipe that cooks in the oven....in minutes) and it was sooooo good.
I wonder that shrimp scampi used to scare me to death and now the Kid wants to know if we can have it again next weekend. I wonder why I don't trust myself more?
I wonder if everyone will have a great time watching the big game while I ignore it with all my heart... I don't care for sports. LOL.
But, just for Alffe ( and my nephews and my nieces and my sister and the Kid) I can say....

It has a LOT of butter, Alffe, but then scampi sorta has to. LOL

Shrimp Scampi

1 lb pasta ( I used fettucini)
3/4 cup butter ( 1 1/2 sticks)
1 lb peeled and cleaned shrimp
4 cloves garlic ( minced)
2 tablespoons fresh lemon juice
3 tablespoons chopped parsley
1/4 cup white wine
salt and pepper to taste

Preheat oven to 400. Put butter in 9X13 glass baking dish and place in oven until butter melts
Add pasta to boiling, salted water
after butter melts add wine.
stir in shrimp, garlic and lemon juice to the melted butter and return dish to oven for three minutes. Remove from oven, stir, add parsley and return to oven for an additional 2 to 3 minutes, or until shrimp is opaque. Season with salt and pepper.
Spoon the shrimp and butter sauce over pasta and and toss to coat

I didn't care for the fettucini. It seemed too "dense" for the shrimp. Will try linguini next time...or even rice.
Hope you like it :-) It came from a friend of mine who is a great Italian cook, and it was seriously delicious!

I really have to wonder....Robins?????? It is snowing like crazy right now..the kind of snow that reminds me of my childhood, Dad "banking" the coal furnace at night and "feeding it" early in the morning so we'd be warm when we got up for school.

And out my kitchen window I see two robins, in the heated bird bath..bathing! Now I know some will tell us that they really do stay here year around inspite of the fact that Barbo & I try hard every spring to spot the first one....

They did look cold....clean but cold!

I have BLUE BIRDS at my feeders!! Blue birds in Feb.? Blue birds at a feeder on my tiny, very high deck, 6 feet from the sliding doors? Blue birds eating suet?
And, of all things, I have one BIG bird I can't identify. He's here, eating or guarding suet almost all day, every day. I've searched every bird book I own, over and over and I can't find him. He makes such odd sounds

Is he a BIG black bird??? We have Starlings...they are absolutely nasty birds who "guard" our feeders.... sigh...
