And I've spent the morning sweeping the basement, wiping off chairs, replacing expired cans of food, washing blankets...if the weather forecast proves correct,, Mr.Alffe Cassie (our dog) and I will be down there..hopefully safe in the fieldstone.

The scary weather alert that came from Goofy's area has passed this county-- I'm so sorry it's heading to yours, Alffe.
It's pouring rain, the temp is dropping --- so, guess what, I'm baking cookies.


TURTLE COOKIES
350* - parchment - 12 min.
2 cups minus 2 tablespoons cake flour
1 2/3 cups bread flour
1 1/4 teaspoons baking soda
1 1/2 teaspoons baking powder
1 1/2 teaspoons kosher salt
2 1/2 sticks unsalted butter
1 1/4 cups light brown sugar
1 cup plus 2 tablespoons sugar
2 large eggs
2 teaspoons pure vanilla extract
2 cups dark chocolate chips
1 cup caramel bits
1 cup chopped pecans
1. Sift flours, baking soda, baking powder and salt into a bowl.
Set aside.
2. Using a mixer fitted with paddle attachment, cream butter and
sugars together until very light, about 5 minutes. Add eggs, one at a
time, mixing well after each addition.
3. Stir in the vanilla. Reduce speed to low, add dry ingredients
and mix until just combined, 5 to 10 seconds.
4. Drop chocolate pieces, caramel bits, and pecans into dough
and gently combine.
5. Press plastic wrap against dough and refrigerate for 24 to
36 hours. Dough may be used in batches,and can be
refrigerated for up to 72 hours.
6. When ready to bake, preheat oven to 350 degrees.
Line a baking sheet with parchment paper. Set aside.
8. use a heaping tablespoon Bake until golden brown but
still soft, 12 minutes. Transfer sheet to a wire rack for 10

hee hee --- share the cookies? Of course. What would I do with the stuff I make except share?
In the past 3 days I've made strawberry fudge (not good), 2 batches peanut brittle (very, very good), dark chocolate-smoked almond bark, white and dark chocolate bark with all sorts of dried fruits and pecans (very good), Mexican Wedding Cake cookies, Triple Chocolate cookies, Cranberry Walnut Oatmeal cookies, 2 batches Vanilla-Macadamia Nut Fudge ......... and the Turtle cookies.
I share a lot of stuff.

Hi,
I am here and alive still. Dealing with my illness and my dads illness the very best I can. Trying to help my mom with all the caregiving. Hoping disability will come through for me finally.

Been absent for awhile and not even lurking. I am bad girl. Decided to pop in and saw this. Nice to see familiar names, people that have been MIA (((David))) for one.

Guilty of using Facebook as well, but to keep tabs on the very close friends I have made here over many years. Facdbook, though, not the place to air my mental laundry.

I desperately need to respond to posties.

Sorry I'm a little late to check in, but I am doing OK .... at last. I had surgery some weeks back followed by some setbacks, but thankfully they're now in the past and I'm looking forward to getting back to normal as soon as possible.

The only other thing with me is I lost a cousin a few days ago. He died suddenly and unexpectedly so that was quite a shock. He didn't even have a history of illness so we just have to wait on the post mortem to find out why it happened.

I know I'm of an age now when older relatives are beginning to die and I know that it's to be expected, but it's always upsetting when it does occur. I've been closer to my cousins than I have to my own siblings, and I have been for decades. We've always been more friends than we have cousins so if one of them dies, I don't only lose a family member but I lose a friend as well.

It's getting cooler here in the Southern Hemisphere. Brrr! I've put on the winter bedclothes and dragged my warm, winter woollies out of storage. I do so hate the cold so thank goodness for central heating and warm clothes. I'm praying for a mild winter and an early spring and hope that your own late spring does not influence the one we will have here, later in the year.

It was lovely hearing from everybody and beg forgiveness for my tardy check in. :grouphug:

Koala, I'm so sorry to read about your cousin. That's sad news.
It is great to hear that you're doing so well though. Keep that up.
You, however, are living in the wrong State! After months of flooding rain, the sun has come out and here we are at the end of April and the middle of the days are like Summer and the mornings are like Spring and heck, it's supposed to be Autumn/Fall. Go figure. Would love to go for a bbq today but it's hard to find somewhere that's quiet on a Saturday up here.

For Wren...

Choc Chip Cookies.
(for lovers of butter and sugar) :)

185g butter (6 oz for you all I think?)
1 teaspoon vanilla
1/2 cup brown sugar
1/4 cup caster sugar (very fine white sugar)
1 egg
1 1/2 cups Self Raising Flour
200g (not quite 7oz I think?) of chocolate chopped in small pieces. Could use choc chips. I just use a cooking chocolate block. Sometimes I use white choc. I try not to make them too often though because we eat them before they're even cool. :o

Beat butter, vanilla and sugars
Add in egg and beat
Mix in the flour by spatula not the beaters.
Add the choc

Mix it all together and put it in the 'fridge for an hour.
Break off bits by the spoonful and cook.

175C (350f I think) oven 15 mins. ( I tend to just check them as I don't like them too brown. I've found they're nicer taken out a tad early.

I tried to correctly convert from our metric to your imperial but not sure it's exact.
