Red face Another Recipe

No posts for several days .......... so it's YOUR fault I am compelled to write something.

CHUNKY PEANUT BRITTLE

1 Package Peanut Butter Pieces
1 1/2 Cups Butter (3 cubes)
1 3/4 Cups Sugar
3 Tablespoons Light Corn Syrup
3 Tablespoons Water
1 1/2 Cups Salted Peanuts, coarsely chopped
1 Package (12 oz) Semi Sweet Chocolate Chips

Lightly grease 15"x10" jelly roll pan. Sprinkle 1 cup peanut butter

pieces evenly over bottom of pan. Set aside.
In 2-3 quart saucepan over medium heat, heat butter, sugar,

corn syrup, and water to boiling, stirring often.. Set thermometer

in place and continue cooking stirring frequently until

temperature reaches 300 degrees F, or hard crack stage.

( about 20 min)
Remove saucepan from heat, stir in chopped peanuts.

Immediately pour mixture evenly onto prepared pan being

careful not to disturb peanut butter pieces. Quickly sprinkle

mixture with semi sweet chocolate pieces and peanut butter flavor pieces.
Cool, ( may refrigerate)

Remove from pan and break into pieces with hands.

Just curious, but what are peanut butter pieces?

I made a double supply of rum balls and white christmas this year. Big mistake! lol

Peanut Butter Pieces are like chocolate chips (and sold in the same dept. of a store) but they are peanut butter flavor. Really a great chip!! Add some to a chocolate cookie recipe and see what happens. LOL LOL --- just like I add chocolate chips to my peanut butter cookies.

I know what a rum ball is .... but, what do you mean by "White Christmas"? What is that?

IMHO -- the "Chunky Peanut Brittle" is really mis-named. This stuff is a peanut butter TOFFEE and it's one of the best candies I make.

Thanks, Wren. I don't think we have those here but I did love eating those Reese's peanut butter cups when I was in the US.

There are numerous variations of the white christmas slice. This year I just used the recipe I'll post below with a major change. So it's just melted white chocolate, rice bubbles, chopped almonds, chopped glazed cherries (I found natural ones in red and greeny/white without the fake colour), dessicated coconut, sultanas (which I think you may call something else. They're dried sultana grapes and really small. Much sweeter and smaller than our raisins) and a hint of vanilla.

Here is the recipe I used this last time however, I didn't use 3 blocks of chocolate lol, I decided that 1 block would be sufficient. Ended up being more rice bubbly and fruity but we liked it better that way.

p.s. In the rum balls I make these days, I don't actually use real Rum. If I was making them as a gift I probably would spend the dollars on a small bottle of dark rum, but we don't drink here so it's just a waste of money. It's cheaper for me to just buy a rum extract in a teeny weeny bottle. Doesn't taste the same but it's still got a small hint of the rum flavour.

p.p.s. Just had a thought... you may call the rice bubbles rice krispies. Our rice bubbles are plain which is what is used in the white christmas.

I cook and bake almost all the time.

And, if a recipe calls for 3 blocks of chocolate, I use 4. LOL LOL.
Tomorrow morning - New Years Eve - I'm taking a load of cookies and candy to our local police dept. I love those guys.
Tonight I'm baking peanut butter cookies loaded with chocolate chips ... and I'll make another batch of that Chunky Peanut Brittle.

another variation...

Cranberry and Pistachio White Christmas

28 1/4 oz. (yes indeed it is 800g )white chocolate chopped and melted
2 cups desicccated coconut
1 cup shelled pistachio nuts
1 cup craisins (dried cranberries)

aaaaaaaahhhh - another one to add to my collection of recipes I MUST try soon. That's one where I have to make changes ...... pecans or walnuts instead of pistachio and dried strawberries or cherries instead of cranberries.

Cooking brings me joy and even makes me feel good.

From the cereal aisle to your kitchen.... crisped rice, bubbled rice, rice krispies....the same, so Ilearn.

They sound yum!

Taking baby steps here after the cervical fusion Thursday.... multiple levels at once to handle it all. SO, seeing your cheery posts about cooking brings a hint of glee to my eyes and crinkle of smile to my lips.
