Banana Nut Bread
1 3/4 cups sifted all purpose flour 2 tsp. baking powder 1/4 tsp baking soda 1/2 tsp. salt 1/3 cup soft shortening (I use Crisco) 2/3 cup granulated sugar 2 eggs, unbeaten 1 cup mashed ripe banana (2 or 3) 3/4 cup chopped walnuts Preheat oven to 350. Grease loaf pan. Sift flour, baking powder, soda, salt and set aside. With electric mixer, thoroughly mix shortening with sugar, then with eggs until very light and fluffy - about 4 min. altogether. Then, at low speed beat in flour mixture alternately with bananas just until smooth. Stir in nuts. Turn into loaf pan and bake 1 hr. Cool in pan 10 min; remove. Cool overnite before slicing.
